Oddly, I've done Wings, pulled pork, briskets, chops, chickens, Turkeys in the smoker but not tried ribs yet. 

I want to-got to but I have this odd feeling I'm going to screw them up?  ?

Zero chance of screwing up ribs, you have much more of a chance of screwing up a brisket than ribs.

 

Start with baby backs.

Peel off the membrane and rinse ribs.

liberally apply a good rib rub a day before you cook and wrap in plastic wrap or vacuum pack.

smoke at 225-250 degrees for 2-2.5 hours meat side up.

wrap in tin foil with apple juice and a little honey or maple syrup and maybe some brown sugar.

cook for another 2 hours wrapped meat side down.

Check for desired doneness. I like mine tender and falling off the bone. If not done to satisfaction, cook another 30 minutes.

Once at desired tenderness, I take out of the foil, apply some more rub and cook another 15-30 minutes. Sauce at this time if desired but I almost never sauce.

Are you saying you you think have to be Famous Dave to cook good BBQ ribs? In my opinion, Famous Dave's is about the worst BBQ restaurant I've ever been to. You could make better ribs on your smoker at home with your eyes closed and one hand tied behind your back.

Ribs are pretty simple.  Dave's method is almost spot on to what I do.  My prep is as Dave does...I have a pellet grill and go 3 hours at 180, then as Dave said meat side down into foil with apple juice 1/2-3/4 cup back on at 250 for 2.5hours and then pull out of foil (they will be fall off the bone so handle gently) then I sauce them and put them back on the grill for 20-30 minutes

they don't get that far gone..  I'll be doing some spare ribs that way tomorrow but most likely Saturday and you can pull a bone out, but the meat hangs together...

IMO spare ribs take around 6 hours most of the time to get fall off the bone tender but backribs usually take 4-5 hours in my experience.

with the process that I listed for ribs IF I turn the heat to 225, for the 2.5 hours they are to be in the foil, I find the meat still holds to the bone but still tender meat.  My family just prefers the pull the bone out and eat type of ribs.  And i am not sure where you would question 6 hours to smoke baby back ribs as almost all the recipes out there say to use to 3-2-1 method or a 2-2-1 method, but I just adjusted to a 3-2.5-.5 method.  It all depends on the temp you like to run them at.  Like I said I start the first 3 hours at 180 to get the most smoke flavor out of my pellet grill then I crank up the heat.  If i started at 225 or 250 then this process might be overkill for baby back ribs.  But do as you please as Dave mentioned it is pretty hard to screw up ribs!

Looks great. I still can’t believe how expensive ribs are. Last time at Costco 3 rib pack was $60. Usually we do 2 packs and freeze the 4 of the racks after they are smoked.

I bought these ribs at cost from my buddy that owns a meat market and I still paid $95.00 for 6 racks.

    • Chicken mine,  melded in Mccormick poultry seasoning for 24 hours.  Grill will get a break till the frigid temps go away!
    • we had some nice weather yesterday and this conundrum was driving me crazy  so I drove up to the house to take another look. I got a bunch of goodies via ups yesterday (cables,  winch ratchet parts, handles, leaf springs etc).   I wanted to make sure the new leaf springs I got fit. I got everything laid out and ready to go. Will be busy this weekend with kids stuff and too cold to fish anyway, but I will try to get back up there again next weekend and get it done. I don't think it will be bad once I get it lifted up.    For anyone in the google verse, the leaf springs are 4 leafs and measure 25 1/4" eye  to eye per Yetti. I didnt want to pay their markup so just got something else comparable rated for the same weight.   I am a first time wheel house owner, this is all new to me. My house didn't come with any handles for the rear cables? I was told this week by someone in the industry that cordless drills do not have enough brake to lower it slow enough and it can damage the cables and the ratchets in the winches.  I put on a handle last night and it is 100% better than using a drill, unfortatenly I found out the hard way lol and will only use the ICNutz to raise the house now.
    • I haven’t done any leaf springs for a long time and I can’t completely see the connections in your pics BUT I I’d be rounding up: PB Blaster, torch, 3 lb hammer, chisel, cut off tool, breaker bar, Jack stands or blocks.   This kind of stuff usually isn’t the easiest.   I would think you would be able to get at what you need by keeping the house up with Jack stands and getting the pressure off that suspension, then attack the hardware.  But again, I don’t feel like I can see everything going on there.
    • reviving an old thread due to running into the same issue with the same year of house. not expecting anything from yetti and I already have replacement parts ordered and on the way.   I am looking for some input or feedback on how to replace the leaf springs themselves.    If I jack the house up and remove the tire, is it possible to pivot the axel assembly low enough to get to the other end of the leaf spring and remove that one bolt?   Or do I have to remove the entire pivot arm to get to it? Then I also have to factor in brake wire as well then. What a mess   My house is currently an hour away from my home at a relatives, going to go back up and look it over again and try to figure out a game plan.           Above pic is with house lowered on ice, the other end of that leaf is what I need to get to.   above pic is side that middle bolt broke and bottom 2 leafs fell out here is other side that didnt break but you can see bottom half of leaf already did but atleast bolt is still in there here is hub assembly in my garage with house lowered and tires off when I put new tires on it a couple months ago. hopefully I can raise house high enough that it can drop down far enough and not snap brake cable there so I can get to that other end of the leaf spring.
