Do whatever you need to do to get it done, but I used to do that to. 

 

BUT, I found that if you dig it and make it the same day it just seems to turn out better.

 

The other thing I've learned as I've made it was keep it out of water as much as possible. Just what I've observed!;

Hard to explain how they taste but better than I thought. There were 5 hearts!

nope..........with all the ingredients already in that brine.....no need. the fish are actually darker then the picture....not sure why that is???????
