Let me know what you need a day or 2 in advance and I'll have it ready for you. I use to order a lot of stuff from Walt's. They do have a really good assortment of seasonings, tools, etc. I have learned a lot of info from their YouTube videos as well. Last year we did ask at a butcher in a neighboring small town, and he said that he used mostly excalibur products ( other than a few "secret" recipes) and little did I know that there was a retail store right in Sioux Falls! (https://www.northcentralfoods.com/) Their prices were significantly lower than Walton's, especially on cheese. We have really fallen in love w/ the Philly Cheesesteak brat seasoning and we put in pepperjack cheese. The prices help allow us to experiment w/ small batches of stuff to see if we like it before committing to a 25# batch. I would rather waste $10 of seasoning versus wrecking 25# of deer/venison/beef! Got a few weekends of processing ahead of me. This weekend I am doing 50# of summersausage, 20# of jerky, and 20# of patties!.... Pictures to follow. rundrave, Wanderer, leech~~ and 5 others

The kit includes seasoning, cure, and casings for $20 and does 25#. I add 1.5# of high-temp cheddar to mine. Ronnie D and rundrave

You can buy the seasoning and casings separately from PS and save about $4 https://www.psseasoning.com/collections/sausage-making-kits/products/jalapeno-summer-sausage-kit Mike89
