I soaked the beans overnite, threw in the 3 smoked pigs hocks and hambone, along with 2 bay leaves and a 7 whole peppercorns... Simmered for 2 hours... Pulled the hocks and bone, and added the onions, celery, ham chunks and trimmimgs, carrots, and some drops of hickory smoke, simmered all for another hour until nice and thick...guess what's for dinner? Actually, REAL chili never had beans in it, and was made from chunks of dried beef, fat, and chile peppers, and possibly dried tomatillas. One of the International Chili Associations actually bans beans in chili, and no marinated meat is allowed......strip beef only. God forbid if they ever saw hamburger being used. I won't even mention kidney beans. That's why I won't post my chili recipe. Too many years entering chili cook-offs, fortunate enough to learn from some of the best, and working at my uncles southwestern/Mexican restaurant all thru high-school for money. I figure whatever works for ya is great, so cook away, but I kindly decline to get into a dissertation about chili. I just enjoy mine. Never have used a specific recipe. I like it sweet and tangy. Minnysoda has lotsa good stuff. Cant count how many times I have made chili but very rarely is it the same as the last batch, but always really good.
