Baked Walleye

I'm looking to try something new for my walleyes. I almost always just fry them in some oil, but after it making my entire apartment stink like fried fish after doing it last night, I decided I wanna try to use the oven for less smell and perhaps more healthy fish. Does anybody have any recommendations for how to do this??? Thanks!

I do baked walleye in the oven. use a glass pan, put a small amount of oil in the bottom or spray with cooking spray. i do a light coating of favorite seasoning and let them go. i never have to flip them, 350 oven. does not smell like frying does. good luck

Julienne cut some sweet Onion, carrot, red bell peppers and zucchini, toss lightly with a little Olive oil, salt,pepper,

Place Walleye Fillets on non-stik aluminum foil, add a couple pats of butter and very thinly sliced fresh lemon slices. Arrange your vegetables on top of the fillets, seal the foil and bake for appx. 20 minutes at 400 degrees.

Remove from the oven and place on warm plates. You can serve with your favorite flavored rice dish (Uncle Ben's)or fresh crusty bread.

Try this. We did this last year at our annual Canadian fishing outing and it turned out pretty darn good.

Slice onion on the bottom of a baking dish. You can add a little butter with the onion. Lay your fillets on top of the onion then add some Catalina dressing. If you have more fish, layer on more onion, fish, and dressing.

Bake at 350 degrees until flaky.

never tried to bake them but, we do broil them. I fed this to the guys in Canada and they loved it. I like it beter because the fish flavor isn't camo-ed by any breading.

pat dry the fillets

lightly coat them with olice oil

sprinkle with:

lemon juice

lemon pepper

a hint of garlic powder

black pepper

place on a layer of foil, place in the broiler til flaky. The 1st time you hafta watch it and time yourself because all lower rack broilers are not created equal.

Shore Lunch sells a breading mix that you just use to cover fish then stick in the oven on a lightly greased pan. Quick and easy and pretty darn good.

What we have done is to dip in a milk then roll in crushed ritz crackers. Put a little butter on each fillet then sprinkle a little garlic salt a pepper on em and bake. They are so good cuz the ritz crackers absorb the butter and then brown and cruch. They are to die for if done right.

I tried the Shore Lunch Oven Style last nignt. I have to admit I was impressed. Very good.

I did the same thing for the first time tonight, I wasn't expecting much but it turned out excellent! Ended up crispy and just like regular shore lunch minus having the fish all oily. I will be for sure using this again.

Barely coat the bottom of a glass baking pan with olive oil. Put it in a pre-heated oven at 400 for 8-10 minutes or so til its screaming hot. Placed walleye, seasoned on one side with montreal steak seasoning (lightly seasoned) and then a liberal coating of parmesan cheese, into screaming hot pan in oven. Let this cook for five minutes or so on seasoned side til its nice and golden brown. Turn over and finish cooking in the oven til done.

Dip the fillets in oil, lay then in a glass baking dish, and sprinkle crumbled potato chips and shredded cheddar cheese over the top.

Bake about 40 minutes at 350*.

Use sour cream and onion flavor chips for a slightly different taste.

Totally understand not liking to stink up the house with fried anything but if you honestly like fish, once you try baked, microwaved or even fish soup, fried fish will go to the bottom of your list. I have shared a couple of recipes on our annual Canada fishing trip and I don't know if the guys keep coming back for the fishing or for the eating? If interested, I can post more. Pike

OK.. Sorry about that. Just checking to see if anyone is listening...Here is a simple microwave fish recipe that I like when cooking for two or three people. It is the wife's favorite.

In a 12x8x2 inch microwave dish arrange fillets with thickest, meaty areas to outside edges of dish. Sprinkle with lemon pepper and Old Bay Spice.

In a microwave measuring cup, melt 1/3 to 1/2 stick of butter. Blend in a good Tablespoon of chopped parsley and 1 Tablespoon of lemon juice and pour over fish fillets; coat well.

In a sandwich bag, crush a half cup or so of buttery crackers or a combination of saltines, Ritz Crackers, corn flakes, oyster crackers or whatever you have. Sprinkle the cracker crumbs over the fish.

Cover dish with wax paper and microwave on high for 5 minutes. Rotate dish and microwave another 4 minutes (or 5 minutes if the filets are thick).

How about some tartar sauce you can make up yourself: Miracle Whip, Sweet Pickle Relish, dash of Lemon Juice and some dill weed. The dill weed is the secret ingrediant.

Serve with Cole Slaw, Homemade Pickled Beets and Toasted French Bread.

If you want to try a few variations, add a little sliced sweet onion on top of the fish, some sliced tomato, a slice or two of green pepper or some of all. Can also sprinkle a little shreaded parmesan cheeze on top if you like. If you add a lot of stuff, you may have to cook a little longer.

Quick, easy and no mess!

Here is one to try for the "natural" fans of walleye (no crust, batter, etc)

Layer sliced onions in the bottom of a 13x9 glass baking dish. Follow with a layer of walleye fillets then a layer of thin sliced lemons, then onion, then fish then lemons and keep going until you hit the top of the pan or run out of fish! LOL

Cover with aluminum foil and bake until flaky. Very tasty and the taste of the fish really comes to the front rather than the batter or crust. (I do still love battered fish though but a good change of pace)

Don't rule out the microwave either. Melt a little butter in the bottom of a dish, roll the fillet in it, and sprinkle with whatever seasoning you would like and cover. Microwave time depends on the thickness and quantity of fillets but they will come out steamed and tasty.
