McGurk
Steam boiled eggs... Success! No pins involved, 12 minutes in steam, a few in ice water, and all peeled like a dream! Only one of the 20 had a cracked she'll, but I always need a test egg to sample for "doneness" . Yolk in test egg was solid and golden without a hint of green, and no "hackey sacks" in the other 19 either! I'll definitely do this again! eyeguy 54
eyeguy 54
interesting. never have steamed eggs
lovebigbluegills
I smoked a dozen eggs with the cold smoke attachment today. Used cherry for a little over an hour today and pretty heavy smoke. Hardly any color and not much taste. I'll definitely try again with different wood, but maybe its takes a little heat for the smoke to adhere to the eggs?
eyeguy 54
never have done it that way. apple and cherry have a great taste. I put them in cold, turn it to 145 or 15 and let it go 45 minutes and pull them. maybe just needs more time cold smoking?
lovebigbluegills
Next time, I'll give it a couple hours and if I get the same results I'll turn some heat on.I'll report my findings. The cold smoker attachment sure seemed to work nice for cheese though- those are vacuum sealed in the fridge for another week or two before sampling. eyeguy 54

bobberineyes
Cold smoke definitely takes longer. I used to do them on the weber with 6 briquettes and only took about 30 min. I didn't want much heat since they were already cooked.
RebelSS
I've always wondered what a quick soak in diluted liquid smoke would do.....hmmm....
eyeguy 54
do they get much flavor with the briquettes? 145 in the smoker doesnt really cook them much, just gets them real tasty. pics and test it soon Reb
RebelSS
I might haveta do that......just like the "fake" BBQ places with their "smoked" meat do. eyeguy 54

RebelSS
Was lucky enough to catch the one-hour show "Modern Marvels...The Egg" last nite. Watch it if it ever comes on again. Included partial clip here. I learned why high end restaurants use grade AA eggs.. the yolk is rounder, and stands UP quite a bit higher, creating a nicer looking egg...and that the cholesterol in an egg can be controlled by what the chickens are fed. reinhard1

leechlake
always wondered who was the first brave soul to eat en egg and how they came to be such a staple in our diet. The concept of the egg is pretty gross.
