I make a batter with 2 eggs, 1/2 cup seasoned breadcrumbs, 1/2 cup Bisquick, and enough beer to make it into a pancake-like batter (about 1/2 can) and a tablespoon of Old Bay Seasoning. Salt to taste when the fish is served.

I've also heard of, but not tried, using seasoned instant potato flakes.

I'll be interested in other ways to prepare the fish too. Any receipes that don't involve frying?

I very rarely fry fish. Stir fried with bamboo shoots and asparagus is good. Parmesan encrusted and baked is awesome. Broiled with Old Bay and I just tried a poached walleye that was amazing. I think I fry fish maybe 2-3 times per year.

Saltine Cracker are usually my base from there I have done alot of experiment. Usually 60% crackers ~~~~40% experiment.

I've added

Doritos (spicy nacho) mmmm my favorite by the way

Cheetos not bad either

jalapeño Cheetos (darn good as well, with a little zing)

Sun Chips

Old Dutch (sour cream and onion)

Andy's Fish Breading Red Mix - available at Fleet Farm.

Andy's = cheap+great flavor. Hands down favorite at my house. It is a little like shorelunch cajun, but not quite the bite, with a lil cornmeal like texture. I dip in egg/milk wash and throw it in the fryer. Sprinkle with a little salt after it comes out. Oooh Baby! crazy.gif

My wifes favorite is milk, then flower mixed with whatever spices are around the house (garlic, pepper, lawry's, thyme, sage, oregano???), then into egg, then into finely grated club crackers. Cook em in an oil and butter mixture......too good!

I'm a Shore Lunch Original guy...but rather than dipping it in egg then the dry mix, I like to dip it in milk instead. I find I get less mix/batter on it. With the typically small fillets I bring home if I get too much batter you can't taste the fish!! Using milk gets just enough on to coat the fish but not overpower it.
