You do use the same recipe, but I smoke at 275 until they get to 160.

The problem is that these are "enhanced" for "juiciness". AKA we pumped them so full of salt water you won't even think this was once a turkey. The cure won't take very well on a piece of meat that has a salt solution already in it. I still got a couple but will just be smoking them straight up.

Western WI guys...

Nielsens has nice natural (not enhanced) Baby Backs for $2.99 pound. Bought 4 racks the other day...

also very nice rib-eye roasts... $6.99 pound. Bought a beauty of a 5 pounder. That will be made up on New Years day. MMMMMM

Looking to do some smoking this weekend and went to Costco in Maple Grove. All Natural Pork Butts for $1.75 Lb. Have to buy 15 Lbs, but cut in half and freeze one. Fresh Baby Backs were also $2.99 Lb.

Made pulled pork yesterday with the pork roasts... going to pick up 3 more and do it agian this weeekend! a buck a pound for pork is fantastic to make some bulk pulled pork, then freeze into one pound packages for later use... ie: ice fishing!

May pick up another ham if they have any left. $15 for 3-4 meals is great... had ham sunday, bean soup last night and making wild rice soup tomorrow... along with some fantastic ham and swiss sammies for lunch today!
