Brisket is always so much $ I rarely smoke them except for special occasion. Almost $10 a lb at Sams. $8 at Costco for choice, but the EP Costco had prime for $4 a lb which I've never seen. My work partner picked up two 16# ers for me to smoke and ill keep one. I'd prefer a couple 10-12s so i can do it in one day but oh we'll. Overnight she goes. :-)

Wow. That pays for the Costco membership all by itself! $4 x 32 lbs of meat means $128 in savings. Hmmm....Might be the right time to get my own membership instead of leeching off of others.

About 18 hours on the smoker hovering around 220-225. Put smoke to it the first 6 hours. I rubbed with Montreal Steak seasoning and injected before smoker with beef broth and apple cider vin. Took off when internal temp of flat was about 195, foil wrapped, and let sit in cooler packed with towels for 3-4 more hours.full-9675-49605-brisket.jpg

Don't know if anyone uses bacon when grinding game but Cub (old shakopee rd Bloomington) has irregular sliced hardwood smoked bacon for 2.99 a pound.

That's a really good deal, wish I lived closer. I always grind bacon in with my venison.
