They put that salt solution in them which doesn't allow your cure to work properly. I've done this with the "enhanced" pork and it seems to work. Thanks. Thats a good tip. I thaw then rinse very good and I use my own rub with zero salt. 25 racks or so in the last year and all were dandy. 15 in the freezer again. 1.97 is sweet where ever they come from.
