Leaky Posted September 8, 2011 Share Posted September 8, 2011 I always have a frozen 1.5 lb chunk of hamburger in the freezer and run out of ideas what to do with it. I'm responsible for supper and seem to make the same ole, same ole.What would you do with the burger, other than making patties. Casseroles? Soups? Main Dishes? Help? What could be better?!?Add an egg or two, breadcrumbs, ketchup and/or any other sauces taking up space in your fridge door, a bunch of spices, salt, and pepper, form into a loaf and stick it in the oven for an hour at 350 degrees. reinhard1 Posted September 8, 2011 Share Posted September 8, 2011 i made minestroni soup yesterday from burger. i used Bear Creek soup mix for the main ingrediant. added onions chopped up, garlic minced, celery chopped, peas and carrots, 2 large containers of V8 and a little water. i fried the burger seperatly and drained the fat. [you might want to check out your local cub for the had their fresh packed burger for 1.99 lb. due to the chuck roast add]. sorry i dont have the specific amounts, i just eyeball it and it works out fine. i put the V8 juice in a pot with the onions,celery,garlic and peas and carrots [i use the frozen 16oz pacs already mixed together]. i then put the burger in the pot when the fat is drained[the burger while frying i chopped it up]. when the celery is tender after simmering along with everything else i then put the soup mix in last and let it simmer until the pasta in the mix is tender. having left overs tonight along with some whole grain bagquet heated with butter in between the slices. i also put some salt and pepper to taste while the soup is simmering. the additional water i use depends on how soupy i want it or thicker soup. my crew wants it soupy so i adjust everything toward that. the V8 gives it that real tomato flavor.good luck. I'm also responsbile for the dinners so I'm glad their are others (men) out there!!!! Other than that...I would make ONE BIG A.. HAMBURGER!!! When a guy makes em, might as well grab about 3 lbs of burger and a couple heads of cabbage. They freeze up good for ice fishing chow. Thanks!RH - That sounds awesome! McGurk Posted September 9, 2011 Share Posted September 9, 2011 Another vote for Meatloaf, I like to skip the Ketchup and use whatever bbq sauce that needs to be finished off in its place. You can also swap in oatmeal for bread crumbs in a pinch. My wife does that because 1 cookbook said it is healthier, but I don't think it's as good. Another option is to put a tablespoon of italian seasoning to change it up, top it with tomato sauce or spaghetti sauce instead of ketchup, and serve with pasta. Just increase the recipe for a 1/2 more meat. Instead of the homemade dough, just buy some of the frozen dinner roles, thaw them and knead a few together. If you want, you can add some cheese too them too. I will add provolone to a few, but you could put whatever in them. Yum, now that I'm thinking of these, i'll be making some this weekend. Ingredients 4 1/2 cups all-purpose flour, divided 1/2 cup sugar 2 (.25 ounce) packages active dry yeast 1 teaspoon salt 3/4 cup milk 1/2 cup water 1/2 cup shortening 2 eggs FILLING: 1 pound lean ground beef 2 small onions, chopped 4 cups chopped cabbage 1 teaspoon salt 1/2 teaspoon pepperDirections In a large mixing bowl, place 1-3/4 cups flour, sugar, yeast and salt. Heat milk, water and shortening to 120 degrees F-130 degrees F. Pour over flour mixture; add the eggs. Beat with an electric mixer on low until blended. Beat 3 additional minutes on high. Stir in the remaining flour; knead until smooth and elastic, about 6-8 minutes Place dough in a greased bowl; cover and let rise in a warm place until doubled, about 1 hour. Meanwhile, brown beef and onions in a skillet. Add the cabbage, salt and pepper; cook until cabbage is wilted. Punch dough down; roll into 12/6-in. squares. Top each square with 1/3 cup meat mixture. Fold into triangles. Pinch edges tightly to seal and place on greased baking sheets. Bake at 350 degrees F for 20 minutes or until golden brown. Serve hot. Make a thin pattie and wrap it around a pre-cooked and warmed through corndog. Add some bacon for good measure. Grill until the burger is done and the bacon is crispy. An old Girl Scout camp favorite, brown the burger with some chopped onions and crumble. Add to a large can or two of vegtable soup (no water) . We called it campfire stew. fishinchicks Posted September 9, 2011 Share Posted September 9, 2011 My vote would be Swedish meatballs, or hamburger gravy over mashed potatoes.For the hamburger gravy, we go simple. Brown the meat with some onion and Worcestershire sauce. Dump in a can of cream of mushroom soup, and whatever seasonings you feel like adding that day. If I have sour cream or Greek yogurt, I'll add a soup spoon sized dollop near the end of cooking time. You can add mushrooms as well. Heat it up until it boils a bit, and the sauce thickens a touch.
