Easter Dinner Plan?

My wife and I are hosting Easter Dinner this year for about 15 family members. We pondered things and are tired of having ham for the umpteenth time. After going over many options we've decided on having an Italian themed feast this year. For the boring we're having Lasagna since it's usually a crowd favorite, making bolognese sauce that cooks for about six hours with the kitchen sink in it and adding some great Italian sausage from the meat market, final item is a creamy sauce with garlic shrimp. My daughter caught wind of the plan and asked me to make home made bread too. Can't say no to her request.

Various salads, sisters are bringing pie but I'm also going to make some home made cannolis to keep the them alive.

What's cooking at your house (besides hard boiled poked eggs)?

Always host a breakfast brunch for around forty. Lots of pork...wild rice sausage, thick strip bacon, patty. Lots of bakes...cheesy egg/potato. Fresh fruits, salads, breads. Usually cook the 20 lbs or so of the pork a day ahead of time and after rendering down all that pork fat, will go till a month or two before I will eat it again smile

I like the idea or your nontraditional holiday meal. They always seem to taste better then the same ole...

Smoked Deviled Eggs and Blueberry Coffee for Breakfast, Church, Coyote Moon Grille for dinner (that's noon to me ;)). Supper???? No plans yet but probably grill something. Laid back day this year. Just the 2 of us. Happy Easter ! ! !

Heading to the inlaws, she is either going to dry the heck out of the ham or drown it in some kind of sugary liquid.......or worse, my father in law will slice it Nd grill it to death with a honey mustard sauce on it.....better pack my hip flask

We are doing an Easter brunch at my house. I'm going to whip up a batch up pancakes that I am known for. Others will also be bringing various brunchy type items plus the bro-in law is mixing up some sort of adult beverage of his own creation which rarely disappoints.

For dinner I'll probably kick everyone out and then grill steaks for the wife and myself.

Also debating on firing up the smoker this weekend. Not sure what I'll smoke yet but I feel like I should smoke something.

Im throwing a full brisket on the smoker that's around 17 pounds and the wife is putting a ham in the crock pot in case of emergency. Other than that it's going to be the usual holiday things that in-laws bring like green bean casserole and some sort of pasta salad.

    • If you really want to treat your wife (and yourself) with a remote operated trolling motor, the Minn Kota Ulterra is about easy as it gets.  Auto stow and deploy is pretty awesome.  You just have to turn the motor on when you go out and that the last time you have to touch it.   24V 80lb.  60 inch shaft is probably the right length for your boat.  They ain’t cheap - about $3k - but neither one of you would have to leave your seat to use it all day.
    • Wanderer, thanks for your reply. I do intend for it to be 24 volt, with a thrust of 70-80. Spot lock is a must (my wife is looking forward to not being the anchor person any more).  With my old boat we did quite a lot of pulling shad raps and hot n tots, using the trolling motor. Unlikely that we will fish in whitecaps, did plenty of that when I was younger. I also need a wireless remote, not going back to a foot pedal. We do a fair amount of bobber fishing. I don't think I will bother with a depth finder on the trolling motor. I am leaning toward moving my Garmin depth finder from my old boat to the new one, just because I am so used to it and it works well for me. I am 70 years old and kinda set in my ways...
    • Dang, new content and now answers.   First, congrats on the new boat!   My recommendation is to get the most thrust you can in 24V, assuming a boat that size isn’t running 36V.  80 might be tops?  I’m partial to MinnKota.     How do you plan to use the trolling motor is an important question too.     All weather or just nice weather?   Casting a lot or bait dragging?   Bobber or panfish fishing?   Spot lock?  Networked with depth finders?  What brand of depth finders?
