Super Bowl Appetizers

My neighborhood watering hole is having a pot luck for Superbowl. They are furnishing a nacho bar, and tables for folks to bring other goodies or a crockpot. So far I've seen ham & beans, corn muffins, Swedish meatballs, smoked cheese, and a lot of sweets on the sign-up list. I'm still debating about smoking a few things and watch the game at home.

Bacon wrapped cocktail weiners

Takes some time but well worth the effort.

Preheat the oven to 325

Cut bacon into 4 lengths

Wrap cocktail wiener with bacon and use a toothpick to hold bacon

Place on a large baking sheet

Sprinkle brown sugar over the weiners and bacon

Bake for 40 minutes or until the sugar is bubbly

Put wieners in a slow cooker on low setting.

I hear you on that. I turn them up a notch by adding cayenne to the brown sugar. I sprinkle the sugar/cayene mix on both sides of my bacon, then wrap and generally do them in my smoker. Seasoning on both sides insures you will get the heat-n-sweet flavor.

Now that sounds like a real yummy plan!! I like the idea of the heat. My MIL makes these at Christmas time but there will never be any heat.

I'll be up the shore snowmobiling til a couple hours before the game.

I am doing "teriyaki/brown sugar/olive oil/onion and garlic pepper" marinaded alaskan red salmon on the grill, 3 pounds of hot wings with celery sticks, veni sticks, and some extra sharp cheddar with crackers so far. Oh and a dozen apple cider pickled eggs that have brined for a week. Add to that some Oskar Blues and Odell brewery cold ones, and life will be good gringrin

Any yummy suggestions for something I can do in the smoker in those couple hours before the game????? Bacon wrapped cayenne smokies look like a possible candidate.

We wound up grilling some sausage, chicken wings and some stuffed poblano peppers to have during the game.... but we went to the local watering hole to have a pre-game drink (and to check out the pot luck). Ham and beans, chili, meatballs, cheese trays and bowls of Chex mix were some of the standard items, but here is the star of the show for decoration and content.

Chips in the stadium, the field was avocado dip, the goalposts were Slim Jims, deli meats, summer sausage and salami on the outside.

Do you have a recipe for the apple cider eggs??

Brine is really easy. Depending on how big a batch/jar I am making I mix 3 parts apple cider vinegar with one part water, add pickling spice and an extra bay leaf or two and bring to a boil.

Remove from heat. I fill my jars starting with a full slice of sweet yellow onion, a layer of eggs, full slice of onioin, eggs/onion and so on until the jar is full. Then I pour the hot brine over the works right to the top (in the sink) and cover. Wipe off and put in the fridge for at least 3/4 days, but the longer the stronger grin

Definitely going to give the pushpin method a try on the next batch!

    • If you really want to treat your wife (and yourself) with a remote operated trolling motor, the Minn Kota Ulterra is about easy as it gets.  Auto stow and deploy is pretty awesome.  You just have to turn the motor on when you go out and that the last time you have to touch it.   24V 80lb.  60 inch shaft is probably the right length for your boat.  They ain’t cheap - about $3k - but neither one of you would have to leave your seat to use it all day.
    • Wanderer, thanks for your reply. I do intend for it to be 24 volt, with a thrust of 70-80. Spot lock is a must (my wife is looking forward to not being the anchor person any more).  With my old boat we did quite a lot of pulling shad raps and hot n tots, using the trolling motor. Unlikely that we will fish in whitecaps, did plenty of that when I was younger. I also need a wireless remote, not going back to a foot pedal. We do a fair amount of bobber fishing. I don't think I will bother with a depth finder on the trolling motor. I am leaning toward moving my Garmin depth finder from my old boat to the new one, just because I am so used to it and it works well for me. I am 70 years old and kinda set in my ways...
    • Dang, new content and now answers.   First, congrats on the new boat!   My recommendation is to get the most thrust you can in 24V, assuming a boat that size isn’t running 36V.  80 might be tops?  I’m partial to MinnKota.     How do you plan to use the trolling motor is an important question too.     All weather or just nice weather?   Casting a lot or bait dragging?   Bobber or panfish fishing?   Spot lock?  Networked with depth finders?  What brand of depth finders?
