Anyone have good recipe for wild turkey breast?

We made chicken parmesan using wild turkey breast. Cut meat into 2-3" pieces. Pound the meat to a thickness of 1/4". Put the meat patties into an egg bath then into a mixture of bread crumbs and parmesan cheese.

Lightly fry the patties in olive oil to crust up the outside. Then place the patties in a baking dish, cover in spaghetti sauce then add cheese. Bake 12-15 minutes until the meat is cooked through.

Serve over spaghetti noodles.

Marinate in Lawry's Tuscan Sun dried tomatoe marinade.

Butterfly the breast. Fill with blanched asaparagus spears and a whole ball of fresh mozzerella (real mozzerella not the shredded stuff in a bag)

Close breast and wrap in proschiutto. Usually one package is plenty.

Put on grill and cook it with indirect heat till internal temp is 165 degreess. You can move over the direct heat for the last 10 minutes to lightly crisp up the prosciutto if you wish.

Let stand with foil cover for 5-10 minutes before slicing... fanatstic!

Done this with my last two birds... did it up in deer camp last fall, huge hit!

The first time I did this there was some of the second breast left over and put the slices on ciabatta rolls and some good swiss cheese on top and another slice of prosciutto underneath... baked it for 10 minutes at 400 degrees, one of the best sandwiches I have ever eaten!
