As much as I love a good veni chili, if I'm spending a weekend in the fish house with the guys I leave the chili at home for aromatic reasons. I also have a small grill that I use for burgers and brats. The coleman campstove in the fish house gets used a lot for bacon, eggs, hash browns, and most importantly......fresh fillets!!!!!!! The key is to plan, prep, and break down ingredients ahead of time. For a quick evening meal I like to just fill a jar with soup or stew, throw it in the pan and warm it up, crackers on the side. Even out of a can works. Or nothing easier than a frying pan and some sort of sausage, brat, etc. I'll have it cut up into pieces, just dump from bag into frying pan. Over the weekend I just bought some breakfast links at a butcher, they'll either be supper or breakfast. Slice of bread on the side for a quick sandwich, we're good to go. When i am fishing I don't want to be cooking... I want to be fishing! We like dogs/brats and sandwiches. Von Honsens maple beef sticks... and a cocktail if we are staying all night. reinhard1 Posted December 16, 2011 Share Posted December 16, 2011 if you like sourkraut, you will love this. i make this as a sidedish for potroast and dumplings. i have posted this before in another thread but this is something you can make ahead the day before you go fishing [do not freeze].this is an old german recipe i got from my mother and is a popular side dish as i stated above. this can also be used as a topping for brats [dont need anything else] with a cold one.SOURKRAUT WITH BACON2 bags of refrigerated krout in bags [dont like the can stuff]2 onionspepper1 pound of baconput the bags of kraut in a pot and give it one rinse. then put enough water just enough to cover the kraut in the pot. cut up the 2 onions and put that in the pot with the kraut and add about a tsp of black pepper [i just shake in some to my taste]. bring this to a simmer and simmer for about 20 minutes.now while your waiting for the kraut, cut up the bacon into tiny pieces and fry until golden brown and crisp. you got to time the kraut and the bacon so they get done at the same time or close to it. when the kraut is done [ 20 min or so] drain all the liquid from the kraut and put the kraut back in the pot. then put the crisp bacon and the hot grease in with the kraut and mix up well. ok that's done.what i would suggest is to get some ring bologna [course ground], or kiebasa or polish for the trip. bring the pot of kraut along [make it big enough so you can throw in the sausages]. re-heat the kraut with the sausages in there or cut the sausage into chunks and put them in with the kraut. keep the heat on medium low and turn and mix everything until everything is nice and hot. throw some on a plate and eat. or if you dont want to mix the sausage in with the kraut, heat the polish links up in some water and when heated put one on a bun and throw some of the hot kraut/bacon mix on top and chow down. great stuff. good luck. I make my own cocktail sauce wich is just ketchup and horseradish and you can add a little optional soy sauce if you want. Never any leftovers. Lots of other options but I try to keep it simple and less dishes. Brats,Dinty moore stew in bread bowls,grilled cheese sandwiches,anything you can freeze and reheat like spagetti or lasagna or chili. Very little work, throw the ingredients in the pot, go fish for a while, turn turkey breast, go fish some more, dinnertime.....enjoy! reinhard1 Posted December 22, 2011 Share Posted December 22, 2011 how many bring up the common mustard and relish for the dogs or brats? uncommon mustard3/4 cup prepared yeallow mustard2 tbls dried minced onion2 tbls chopped fresh chives1 tbls garlic powder1 tsp dried oregano leavesin a small bowl, stir together all ingredients. transfer to an airtight container and refigerate 8 hours or overnight to allow flavors to blend. store in the fridge. i put it in a tupperware container and put it on with a knife or spoon.Sweet Pickle Relish1 jar [32 oz] kosher dill pickles, drained and rinsed1 tbls vegetable oil1/4 cup finely chopped celery2 tbls finely chopped onion1/4 cup red wine vinegar3 tbls granulated sugar3 tbls honey in a blender or food processor, finely chop pickles. transfer to a medium bowl. in a small skillet, heat oil over medium heat. add celery and onion; cook until tender. add celery mixture and remaing ingredients to pickles, stirring until sugar dissolves. transfer to an airtight container and refrigerate 8 hours or overnight to allow flavors to blend. store in refrigerator.i found these in a cookbook and have been tweeking them once in awhile. i'm going to try horseradish mustard and add the stuff to it and see how it goes. i like the relish the way it is. it's just an idea to bring up for the day and add a little more taste to a dog, brat, or polish. good luck. Annual New Years trip with two other couples and their shacks tenatively scheduled for URL due to poor ice on LOW. The meal we are prepping is for Thursday night. Bacon wrapped chicken breasts cooked over sliced corned beef and covered with a cream of mushroom/sour cream sauce baked in the oven. Served with dairy bake potato (cheesy southern style hash browns) and bagged garlic ceasar saled.
