Starting mine tonight as well have a bunch of ripe tomatoes and my jabenero's look good also along with a bunch of habenero's makeing some fire hot salsa let the choppin begin.. The mason jars are rattling as I type .. darn no lids off to the store I go...

Learned the hard way about chopping jalapenos and wearing gloves. let's just say I wish it was my eyes that were burning. whistle

hahah I've been there before man. NOT fun

that said, I didn't have too much trouble this year after chopping 2 pounds without gloves.

We are making our salsa this weekend. Hot hot and hotter!

No gloves. Just good old fashioned norwegion toughness!

Royce, you gotta come down sometime or vica versa and do some taste testing.

That would be fun but I can't handle the HOT stuff, lol. Go ahead, call me a wimp. grin level 6 on 1 to 10 is about my limit. Last nights batch is about a 5.5 with the extra tablespoon of cayene pepper in it. Just right! :>)

Gloves and goggles everytime for me from now on after last weeks 30 minute eyeballs on fire torture time. LOL Fingernails burned for 3 days! 18 more pints this last batch and with the salsa man get up all was just dandy afterwards. Might have to do batch # 3 after labor day :>)

OK Mark, try this. Strip all the seeds out of the jalos with your fingers, this is after you cut up other peppers and onions and run in the processor to get those nice fumes all over your face, then half hour later, accidentaly rub your dry eyes. Me being only 90 % Norsky I guess is why I almost screamed! LOL

Yeah, I am going to have Papa Norts making salsa all weekend. We have never canned it though. Just saved what we could eat and gave away ther rest. Would love to can some. We do have a big canner somewhere. Could someone tell me how we do this. I realize we would need jars and lids too. Any help would be appreciated. Love this forum, some great cooks here.

clean jars and screw bands in hot soapy water and rinse. Jar lids from box into hot water and rince. fill pint jars to about 1 inch from top. Attach lid and screw bands nice and tight. into canner and bring to rolling boil. We usually boil 5 to 10 minutes then turn the burner off and let sit for half a day till it cools off. take off the screw bands and lightly push down on center of lid to make sure it's sealed. it'll pop if not sealed. good luck
