Go ahead, call me a wimp. level 6 on 1 to 10 is about my limit. Last nights batch is about a 5.5 with the extra tablespoon of cayene pepper in it. Just right! :>) Gloves and goggles everytime for me from now on after last weeks 30 minute eyeballs on fire torture time. LOL Fingernails burned for 3 days! 18 more pints this last batch and with the salsa man get up all was just dandy afterwards. Strip all the seeds out of the jalos with your fingers, this is after you cut up other peppers and onions and run in the processor to get those nice fumes all over your face, then half hour later, accidentaly rub your dry eyes. I did that once and had the oil on my fingers for two days despite repeated hand washing with several different types of soaps. I always wear gloves now. Just saved what we could eat and gave away ther rest. Would love to can some. We do have a big canner somewhere. Could someone tell me how we do this. I realize we would need jars and lids too. Jar lids from box into hot water and rince. fill pint jars to about 1 inch from top. Attach lid and screw bands nice and tight. into canner and bring to rolling boil. We usually boil 5 to 10 minutes then turn the burner off and let sit for half a day till it cools off. take off the screw bands and lightly push down on center of lid to make sure it's sealed. it'll pop if not sealed. good luck Quote Link to comment Share on other sites More sharing options...
