delcecchi
If you are eating it raw, probably best to grind your own, just as a food safety precaution. Just a suggestion.

delcecchi
Steak Tartare in fancy restaurants or in France. Only they put a raw egg yolk on top, stir it all up and eat it. Oh, and they add capers too. Edited October 21, 2015 by delcecchi

delcecchi
Who processed it? Starting with a chunk of meat is considered the safest. I bet a piece of sirloin or ball tip would work great.
eyeguy 54
ground today at coborns. over the years I have just bought packaged extra lean burger that was ground at the store and it has always worked fine but just wanted 1/2 pound for a quick snack since it's been a while. 1/2 left for thursday. reinhard1
ThunderLund78
One meat market down here by me sells it - they use sirloin. It took me a while to warm up to the idea, but it truly is tasty! I don't get it often -- sometimes for holiday gatherings with the family. Always a good conversation starter! eyeguy 54
