Egg Boiling People

The peeling is one thing, but I find the pricking has a more desireable result: no egg white seepage during the boil. I like to place the eggs into already-boiling water, and about 2 out of every dozen would crack and allow for egg white seepage to get into the water. Not a big deal, but those eggs wouldn't get pickled due to their odd shape after peeling. I found that the pricking allowed air to vent, reducing my seepage to practically nothing and making all the eggs pickle-worthy.

I don't know why you feel a need to fight this, LMIT. State your claim, agree to disagree, and move on. I won't go back as it only takes about a minute to poke 18 eggs, and I have to wait for the water to boil anyway.

McGurk, what were you doing to those eggs to illicit a word filter?

I am serious about trying Lmit's method. Tack, in my case drywall screw, is great and all, but with bunny day coming up, they do crack a lot.

Just need to figure out how a 20 inch box fan would make peeling an egg even better!
In my case it probably would have cooled the eggs better so they weren't as soft...

I just tried my pickled eggs that were tacked. I think they taste much better than untacked pickled eggs. AND that is after only 5 days. I will wait a few days and sit the next jar in front of my fan for awhile and then taste them. I will let you know if they are even better.

I have boiled plenty of eggs without the poke (similar to LMIT's technique), and as I stated before I had seepage in about 2 out of 12 eggs, with those 2 resulting in mis-shapen (but perfectly edible) eggs after the peeling. That went away when I started poking. I think some water actually is pulled back into the egg through the poked hole during the cold water bath, and I think it makes it a little easier to peel them. Obviously, I am wrong, but continue to poke anyway.

Boiling 8 eggs, and then 4 more, as a test is a pretty small sample size IMHO. But, your mind is made up, and we are just id'jits for continuing to do it, so carry on.
