Semi Smoked Pork Blade steak.. Start with a dry rub of your choice. I like a little Crazy Jane Mixed up salt and some Mrs. Dash, maybe a hint of brown sugar.I will smoke these for about an hour only at 200deg.. just to get a smoke on em.. then finish on the grill hot and fast!.. If you like the bacon flavor try using some Bacon seasoning in your mix. You can get it online for around $5.00 and it works great. I've just started expiermenting with it and so far so good. Dark Cloud Posted April 25, 2010 Share Posted April 25, 2010 Heres on of my favorites... Buffalo Garlic Parm Drummies I usually make this with chicken legs or boneless thighs. I put them in a foil packet seasoned with salt, pepper, and garlic powder. Plus a splash of beer in there also. Plop this on a med hot grill for about 20 minutes flipping a few times. Now for the brushing sauce. I dont measure much when cooking but I tried to come up with a base measurement for this dish. Play with it as you want. Melt a half stick of butter Add two tablespoons of olive oil 2-3 tablespoons of hot sauce, I like Frank's 2 teaspoons of garlic powder A healthy amount of black pepper and some salt 1/8 cup of grated parm cheese 1 tablespoon of honey Wisk this all together and brush it on the chicken as you grill it another 20 minutes. One word of caution - the butter, oil, and fat cooking out of the chicken is highly flameable! Dont walk away and also keep a squirt bottle handy... Sometimes I add more hot sauce, orange juice, bbq sauce, fresh herbs, ect... A few marinated breast and a couple plain bbq drummies for the girlfriend. eyeguy 54 Posted April 28, 2010 Share Posted April 28, 2010 No BBQ Sauce but this is one of my favorites4 or 5 Pork Blade Steaks or Pork Chops1/2 cup wishbone Italian dressing1/4 cup pinneapple juice1/2 cup brown sugar3 TBS soy sauce6 slices of pinneapple for grillingcombine the stuff and marinate pork for at least 3 hours.Boil the marinade.Grill the pork and brush with marinade.Grill the pinneapple slices a couple minutes before the pork is done and also marinade while grilling.Boil the marinade again that's left and serve over pork and pinneapple slices.Very messy but man o man is it good! Throw on grill for maybe 2 minutes per side. ... Every time I've served this to guests, they've asked me for the recipe. It will work on any type of pork chop, but the thicker the chop, the longer you should let it marinade. One last thing - I poke each chop about 6 or 7 times on each side with a fork to allow the marinade to penetrate better. The marinade should be good for one "family package" of chops, however you will need to move the chops around some while marinading for even distribution. Joe's Kid Posted May 16, 2010 Share Posted May 16, 2010 Something I really like as a side dish is grilled pineapple and peaches.1 pineapple and 4 or 5 peaches is good for 4 people.Cut your pineapple lengthwise into 1" wide strips and cut your peaches into about 6 or 8 wedges.Grill until done.In a bowl, combine some lime juice,honey or raw sugar, and hot sauce.Stir until the sugar is dissolved if you use that.My favorite hot sauces for this are habanero sauces that aren't too vinegary.I don't have any exact measurements.I start with the juice of one lime and add the other ingredients to taste.Cut your fruit into bite sized pieces and toss with the sauce.Let it sit for a half hour, tossing a few times.Great with pork,chicken,salmon.Put it over some "Premium" vanilla ice cream and it's dessert.
