"Thin" crust pizza!!

Being a fan of homemade pizza, especially thin crust, I discovered something that works awesome! Use a tortilla shell for your crust. Pre-bake at 425 for 4 to 5 minutes on a pizza stone. Take out of the oven and top with your favorite toppings. Bake for another 4 to 5 minutes. Perfectly crispy and anorexic thin. Fast and easy. This would be something that could be made on a grill as well with some creativity, therefore adding something new to the menu on those lengthy fishing excursions.

Thanks, prov1900! I love thin crust pizza. Just gotta ask one thing though, are you using the soft-taco type tortillas (that's what I assume) or the round, hard, crunchy, corn tortillas?

I would say ditto, ditto but I am guessing the soft flour type since prov1900 said to pre-bake it for 4-5 minutes. Thinking the soft tortilla would bake up in that amount of time. If you baked a hard crunchy one for that long it would maybe soften or dry out or burn? Not sure but leaning toward the soft. Great idea if it works, never thought of that and I come from the Pizza Capitol of the World, thin, thick, deep dish and stuffed Chicago pizza rules!

Sorry folks!! I meant the soft ones. The hard ones would work, except they are typically corn, so I wouldn't think that would be as tasty. Windy City Walleye Hunter, I made a "deep dish" with two tortillas. Prebake both. It turned out really well. Lots of great stuff in the middle and crunchy on top and bottom.

In this order from bottom to top. Crust, sauce, "stuff", cheese, crust, sauce, cheese, additional toppings and spice.

From my experience of working in two "major" chain pizza restaurants in college, I learned that it is best to put the pepperoni on top of the cheese. It turns out nice and crispy. Enjoy.

Yep, I've been making tortilla pizzas in the oven for years. They cook very well, and if you add the tortilla on top it's kind of like a quesadilla pizza. The bottom tortilla cooks slower and gets less brittle if you cook them on a cookie sheet. Just be sure to spray the sheet first.

FYI- For a super-fast soft "pizza", you can also do pepperoni tortilla pizzas in the microwave. Just add the tortilla on top or you get sauce all over.

You just gave me an idea. "Italian Burrito"??? Maybe it should be called a homemade "hot-pocket". Make it in a frying pan like a quesadilla, but with pizza sauce, cheese, whatever your favorite toppings are, etc. Just don't forget the anchovies. No kidding, that is one of my favorite pizza toppings, other than pepperoni and green olives.

Yep, done it. It works and gets the tortillas crispy, but it's hard to do the flip without having the tortillas slide. I like it better in the stove.

I've also done pizza spaghetti and pizza lasagna! grin.gif

I have to say this was awesome!

I took 2 of the biggest flour tortillas I could find and put a thick layer of shredded mozzarella cheese on top of one and put the 2nd tortilla on top of that one and covered it with sauce and toppings. I really like the cheese in b/t the two!

I have made a couple of them now after reading the recipe and they are great. Yesterday's lunch version was a 10" tortilla with chicken, (mexican seasoning blends) pepper jack cheese, onion, and standard pizza squeeze sauce. Very tasty, and super easy. Start to finish was 11 minutes. Will be doing that one again...soon.

The wife was away last night so I gave this a try and loved it. I just made it with pizza cheese, and then put pepperoni and sliced bell banana peppers on top and it was awesome. I undercooked the crust a little bit so it was not totally crispy, but I'll precook the shell a little more next time.

Glad you guys liked it. This is the best forum, IMO. It is the one I always check first when I am on this site. Great ideas are shared here. Everyone knows how to cook well and I love to eat. I check this to get new ideas for the home menu all the time.

We usually do this once a week, cheap, quick and good, except I also do mine like a quesadilla as well. Fry up turkey pepperoni (a little healthier) to make it crunchy and build in the pan. Spray the top and use a plate to help flip over and brown the other side. Takes about 5 min if that. Now I'm hungry!!!
