Mine is 165.  Don't need to go that hot?  Isn't 165 considered safe for pork?

that's poultry for that temp (165)...  pork is the same temp as beef....

yep, try 155 next time, they dry nice and even. when I do canadian bacon in the smoker i pull it out at 150. dry at 145 would probably work fine also but would take a long time.

I bought it from your neighbor out on the lake some time back. I think this is like the 4th time I used it. Washing it right away helps. I'm kinda anal keeping things nice and clean.

 

Rings on the jars, leech put you up to this! simply, if I can collabse them they get tossed, till then I reuse them, just don't reuse the sealing lids.
