Some years ago I went out for dim sum with a chinese buddy in California.   Huge place where they roll the carts around..  We had chicken feet and they were actually quite tasty.    

The weren't sous vide though.

When I was a kid we raised hundreds of chickens each season that we butchered and sold to local people. We had several people who wanted us to save the feet of the chickens as well and I think they made soup with them.

If this was when you lived in the south they were probably using them to place a curse on someone.

Chicken feet are used primarily in the south for casting spells, protection etc in the VooDoo religion.  I was trying to be funny but I guess it was a swing and a miss.

Nope, I got it. Santeria is big in places down there.....in fact, I believe Martin Sheen was in a movie about that "religion".

Maybe in the backwoods and swamps of New Orleans or something but not a common practice in northern Alabama, Tennessee or Georgia where I lived.

Yep, they add flavor and gelatin to soup.   They are sort of uncommon in stores here in medville, except maybe in the asian ones.
