Crappie Fish Fry!!

Crappies have such a nice taste on their own that I often like a light batter, but if I am cooking for a lot of people, panko is the only way to go to ensure crispy fish from first batch to last...

Dampen fillets, then into seasoned flour (or shore lunch), then egg wash, then panko bread crumbs. Fry at 360 until golden and drain. Hit with a dash of seasoned salt and/or garlic powder.

Always like having French fries and baked beans as part of our fish fry. I also like to know who wants tartar sauce or cocktail sauce so I can be sure not to invite them next time. Dang fish wasters wink

Flour salt and pepper has been my recent go to. Other good recipie is shore lunch, egg wash, then finely ground cornflakes for acrispy fish recipie. Good for any white fish fresh or salt water. After guiding in Alaska I bring back halibut and never freeze any freshwater fish. Instead eat the halibut if I'm raving fish and haven't been out or use it to supplement a meal of crappie or walleye
