Of course, I had to tweak just a couple of things: Added a few shakes of garlic powder and paprika with a splash of vineger to the dressing. Also threw in a handful of sunflower seeds. Good Stuff!!! Thats a great tip. Thank you. I always keep some bacon fat in the freezer in case I need to render it down for a recipe like this. Or, everytime I start a soup with diced onion, celery and carrots. My mom made it and she is very gifted at cooking and never uses measurements, but here are the ingredients.Brussels sproutsBaconCanola oilVinegarGranulated sugarDillSteam/roast or boil the sprouts - whatever you like. Slice to halves and chill after cooking. Cook the bacon and chop fine. Mix the other ingredients in a separate bowl then pour over the sprouts and bacon. I use extra bacon, extra rasins, and extra garlic.1 lb Brussels sprouts, ends trimmed and cut in halves 2 slices thick-cut pastured bacon, diced 2 cloves garlic, minced 1/2 shallot, chopped fine 1 tbsp pastured butter (not shown) 1/4 cup raisins 1~2 tbsp balsamic vinegar Preheat the oven to 400 degrees. Heat a skillet over medium heat. Cook the bacon, stirring often, until starting to brown, about 5 minutes. Add in the shallot and garlic and continue cooking until the shallots are translucent and soft, about 3 minutes longer.Add the butter and let melt, then remove from heat.In a large mixing bowl, combine the Brussels sprouts, raisins, and the cooked bacon/shallot/garlic mixture. Make sure to pour in all of the melted butter and bacon drippings. Mix well with a wooden spoon or spatula to coat the sprouts.Spread the mixture on a bar pan and place in the oven. Cook for ten minutes, then stir around and cook for an additional ten minutes – or until the Brussels sprouts are browned and starting to crisp a little on the outsides.Remove from the oven and put back into the mixing bowl. reinhard1 Posted April 10, 2012 Author Share Posted April 10, 2012 i'm doing a roasting chicken tommorrow. i'm going to make a batch as described. some on the side and for some strange reason, something in my brain is telling me to use a portion of this to stuff the bird with [will add seasoned bread cubes with it so the bread cubes can soak up the goodness while roasting]. guess i will have to double the recipe i guess good luck. reinhard1 Posted April 10, 2012 Author Share Posted April 10, 2012 brussel sprouts are something you like or hate for some people. i hated them prior to meeting my wife. she used to take the sprouts and put them in a pan with butter and balsamic vinegar. simmered it till tender/done [according to your taste] and the first time i had it i wanted more. so, when i seen these great ideas i could not help myself but to try them. good luck. reinhard1 Posted April 11, 2012 Author Share Posted April 11, 2012 ok, the results are in. the recipe itself was a hit with me and my wife and her mom. bacon is awesome. i did not stuff the chicken because the timing did not allow for it. i did make a half a bag of stuffing mix and some of the recipe when it was done. mixed it up good and baked it also. the way the recipe was made by instrutions was favored by all. the stuffing was tasty but took second place. guess it just doesn't compare to the sausage stuffing they are used too, but it was worth a try. thanks for the recipe and i will be making this again. i know my youngest daughter's fiance will love it. good luck. It is super simple but great!The dressing - a scoop of mayo, a splash of cider vinegar, a little sugar, and some salt n pepper. Mix that together seperatly. Some days we like it with more vinegar, some with more sugar. The last few years I have been using Truvia as a sweetner...Now slice up a cuccumber, chunk up some tomatos, and add in a few slices of sweet onion. I prefer to chill everything in the fridge if time allows.Stir in the dressing when your ready to eat. Your not looking for a heavy coating, just a lite little bit. It does not store well at all. Snowking Posted April 12, 2012 Share Posted April 12, 2012 its not a salad but its one of my favorites for summerrice on the grill1 1/3 cup quick rice1- 3 oz. can mushrooms with liquid1 cup cold water1/4 cup onion chopped fine1 tbls Worcestershire sauce1/2 tsp. salt1 cup frozen peas3 tbls butter2 tbls soy sauceput all ingredients in foil. dot with butter. seal tightly. put into an aluminum pie plate and place on grill for 30-45 minutesthis is my moms recipe and i can honestly say we never put it on the grill. usually it goes into a glass cake pan with plastic wrap on top and into the microwave for 10- 15 minutes Quote Link to comment Share on other sites More sharing options...

reinhard1 Posted April 13, 2012 Author Share Posted April 13, 2012 this is a salad that is we have as a side dish with Korean food, but it works for anything. very good for you as well.Korean Seasoned Spinach [sigumchi Namul]1 pound spinach2 tbls plus 2 tsp soy sauce1 tbls sesame oil1 tbls roasted sesame seeds1 tsp salt2 cloves finely chopped garlic2 tsp sugarblanch the spinach in boiling water for 30 secondsremove spinach quickly and rinse in cold watergently squeeze the spinach to remove excess watermix the rest of the ingrediants well and mix with the spinach well.i usualy double the recipe. i have i have substituted this on top of a burger instead of lettuce. then put the rest of the stuff on top. our whole family makes this simple but good spinach dish [salad]. good luck.
