The Broccoli Bacon Salad RH posted was fantastic. Of course, I had to tweak just a couple of things: Added a few shakes of garlic powder and paprika with a splash of vineger to the dressing. Also threw in a handful of sunflower seeds. Good Stuff!!!

you have to add 1 tbls of bacon grease to the dressing of the tequila berry salad. they never have it in any recipes but when my buddy worked a the vineyard they always added it.

Thats a great tip. Thank you. I always keep some bacon fat in the freezer in case I need to render it down for a recipe like this. Or, everytime I start a soup with diced onion, celery and carrots.

Had a good one today. My mom made it and she is very gifted at cooking and never uses measurements, but here are the ingredients.

Brussels sprouts

Bacon

Canola oil

Vinegar

Granulated sugar

Dill

Steam/roast or boil the sprouts - whatever you like. Slice to halves and chill after cooking. Cook the bacon and chop fine. Mix the other ingredients in a separate bowl then pour over the sprouts and bacon.

Sorry I don't have measurements, but this is a smart crew and can probably make this no problem.

Here is a brussel sprout recipe that my daughter sent me that she got off the net. I use extra bacon, extra rasins, and extra garlic.

1 lb Brussels sprouts, ends trimmed and cut in halves

2 slices thick-cut pastured bacon, diced

2 cloves garlic, minced

1/2 shallot, chopped fine

1 tbsp pastured butter (not shown)

1/4 cup raisins

1~2 tbsp balsamic vinegar

Preheat the oven to 400 degrees. Heat a skillet over medium heat. Cook the bacon, stirring often, until starting to brown, about 5 minutes. Add in the shallot and garlic and continue cooking until the shallots are translucent and soft, about 3 minutes longer.

Add the butter and let melt, then remove from heat.

In a large mixing bowl, combine the Brussels sprouts, raisins, and the cooked bacon/shallot/garlic mixture. Make sure to pour in all of the melted butter and bacon drippings. Mix well with a wooden spoon or spatula to coat the sprouts.

Spread the mixture on a bar pan and place in the oven. Cook for ten minutes, then stir around and cook for an additional ten minutes – or until the Brussels sprouts are browned and starting to crisp a little on the outsides.

Remove from the oven and put back into the mixing bowl. Sprinkle in the balsamic vinegar and toss to coat.

i love brussel sprouts. i'm sure regular bacon will work. haven't seen the pastured bacon around [but i haven't looked for it either]. i know you can get it on line though. free range pork bacon. i like the way this salad is prepared also. good luck.

i'm doing a roasting chicken tommorrow. i'm going to make a batch as described. some on the side and for some strange reason, something in my brain is telling me to use a portion of this to stuff the bird with [will add seasoned bread cubes with it so the bread cubes can soak up the goodness while roasting]. guess i will have to double the recipe i guess gringood luck.

oh yes, i know it's not the normal time of the year for stuffing but sometimes you have to listen to yourself grin. i also sent the recipes for brussel sprouts to my younger daughter who's soon to be husband loves sprouts big time. i will be tempted on the amount of bacon. good luck.

brussel sprouts are something you like or hate for some people. i hated them prior to meeting my wife. she used to take the sprouts and put them in a pan with butter and balsamic vinegar. simmered it till tender/done [according to your taste] and the first time i had it i wanted more. so, when i seen these great ideas i could not help myself but to try them. good luck.

My favorite summer salad is a Waldorf made with fresh picked lettuce, apples and grapes

1 cup chopped, slightly toasted walnuts

1 cup celery, thinly sliced

1 cup red seedless grapes, sliced

2 sweet apples, cored and chopped

6 Tbsp yogurt

2 Tbsp fresh lemon juice

1 tsp Salt

1/2 tsp Pepper

Lettuce

Whisk together yogurt and the lemon juice.

Mix in the salt and fresh ground pepper.

Mix in the apple, celery, grapes, and walnuts.

Serve on a bed of fresh lettuce.

ok, the results are in. the recipe itself was a hit with me and my wife and her mom. bacon is awesome. i did not stuff the chicken because the timing did not allow for it. i did make a half a bag of stuffing mix and some of the recipe when it was done. mixed it up good and baked it also. the way the recipe was made by instrutions was favored by all. the stuffing was tasty but took second place. guess it just doesn't compare to the sausage stuffing they are used too, but it was worth a try. thanks for the recipe and i will be making this again. i know my youngest daughter's fiance will love it. good luck.

We do alot of the traditional mac, tater, and pasta salads but there is one we only have in the summer when cukes and more importantly tomatos are ripe. It is super simple but great!

The dressing - a scoop of mayo, a splash of cider vinegar, a little sugar, and some salt n pepper. Mix that together seperatly. Some days we like it with more vinegar, some with more sugar. The last few years I have been using Truvia as a sweetner...

Now slice up a cuccumber, chunk up some tomatos, and add in a few slices of sweet onion. I prefer to chill everything in the fridge if time allows.

Stir in the dressing when your ready to eat. Your not looking for a heavy coating, just a lite little bit.

It does not store well at all. We just make small batches for most meals when the garden is flowing...

Thats what I'm talking about,Kidd. Won't be fresh picked lettuce,but may need to try this this weekend while smoking an 8 lb butt.

its not a salad but its one of my favorites for summer

rice on the grill

1 1/3 cup quick rice

1- 3 oz. can mushrooms with liquid

1 cup cold water

1/4 cup onion chopped fine

1 tbls Worcestershire sauce

1/2 tsp. salt

1 cup frozen peas

3 tbls butter

2 tbls soy sauce

put all ingredients in foil. dot with butter. seal tightly. put into an aluminum pie plate and place on grill for 30-45 minutes

this is my moms recipe and i can honestly say we never put it on the grill. usually it goes into a glass cake pan with plastic wrap on top and into the microwave for 10- 15 minutes

this is a salad that is we have as a side dish with Korean food, but it works for anything. very good for you as well.

Korean Seasoned Spinach [sigumchi Namul]

1 pound spinach

2 tbls plus 2 tsp soy sauce

1 tbls sesame oil

1 tbls roasted sesame seeds

1 tsp salt

2 cloves finely chopped garlic

2 tsp sugar

blanch the spinach in boiling water for 30 seconds

remove spinach quickly and rinse in cold water

gently squeeze the spinach to remove excess water

mix the rest of the ingrediants well and mix with the spinach well.

i usualy double the recipe. i have i have substituted this on top of a burger instead of lettuce. then put the rest of the stuff on top. our whole family makes this simple but good spinach dish [salad]. good luck.
