hockeybc69 Posted December 7, 2011 Share Posted December 7, 2011 I just saw a post in another thread where someone asked about this.This past weekend I was hunting with 4 other guys and when I told them I make venison bacon they all went cross eyed and stuttered, wondering what the heck I was talking about.If you havent tried it, Venison bacon rocks.Its not bacon as you know it though....Its more like a meatloaf to be honest. You mix venison and pork and use a bacon seasoning. Stuff it in a meat loaf pan and smoke it.When its done, run it through a meat slicer, package and freeze.Too cook it, you donnt fry it like bacon and make it crispy. You more or less warm it.I use a little butter in a pan, warm it to the point where its just about to brown.FANTASTIC ON BLT SAMMIES!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! pushbutton Posted December 7, 2011 Share Posted December 7, 2011 I make homemade gyros meatloaf style, and after cooking place a something heavy like a brick and cast iron pan on top of it and cool it in the fridge or outside if it is cold enough. This really firms the meat up to where you can easily slice it and fry it up, and yes just fry lightly. Also leave it uncovered in the fridge for a while to draw out more moisture. Key is to have enough fat and keep the onions and stuff finely chopped or even pureed. Going to have to try some bacon......Wow, that looks freaking great! I had a taxidermist who is in east Bethel mention deer bacon last year and he said it was really good, where he uses at least 2 deer a year just for this. My wife has cooked some up for herself and my two teenage daughters and there's been nothing left when I got home. Definitely worth doing/buying if you've got family that won't eat venison steak or roast. One other thing that I've tried is to cook it on the gas grill as it gets the flavor from it while also allowing you to make a whole package at once.
