burgers on steroids

Recommended Posts

if i'm going to make a burger, i make a meal out of it. forget the side dishes, i want it all on my burger. here is one example of a burger i make. first if i dont grind it myself i buy ground chuck. i want the meat jucy not dry. so jucy lucy comes to mind.

i make thin burgers in my little pattie maker. just salt and pepper to taste on the meat. in the meantime i fry sweet onions in ring form until they carmalize along with thin sliced jalapeno peppers. i also fry mushroom slices. then i have slices of pepper jack on hand along with romaine lettuce, tomato slices and pre-fryed home made french fries.

fire up that grill. in the meantime take one pattie and put some cheese mushroom and jalapeno that have been fried on top of the pattie and put another pattie on top of the other pattie with the stuff inside and seal all around the pattie with your fingers. then put the patties on the grill until done and the goodness of the inside comes dripping out having put a couple of cheese slices on top at the last moment so they start to melt on the burger..

toast a quality bun on the grill and put some mayo on the bottom of one side of the bun along with some romaine and put the burger on it. cover the burger with some more mushrooms, jallapeno's, and french fries. little ketchup and mustard and top it with the other toasted bun slice. have paper towels handy not napkins.

obviously the calorie count will be all you need for the day. we are eating much lighter now but once in awhile it's pig out time and this is one meal i look forward to on that occation. so, what do you put in your steroid burgers? good luck.

I'm a simple man, and I do like a classic burger! I just made some last night over charcoal consisting of a toasted bun, mayo, slice of tomato, some lettuce, saute'd mushrooms, saute'd onion, sharp cheddar, and a nice thick burger with some simple seasoning like salt, pepper, and garlic powder mixed in the ground beef. Good call on the ground chuck; never get lean ground beef for burgers!

I've also done some experimenting with chopped jalapeno and blue cheese in the ground beef, too. Great flavor but the patties tend to fall apart initially.

nothing wrong with the burger you made yesterday. in my situation, when my family comes over and friends this is what they expect to get. i do different variations, picking up some ideas from show's like hamburger paridise and so on. now my mother-in law like her's small and simple, she's 85 but the rest just never know what's on their burger till they get to our house. good luck.

i like to fry or grill yellow or white onions that have been marinated in balsamic vinegar. Give them an even sweeter taste. I like to season my burger with onion salt or onion powder, and I typically eat them on an onion bun!

something i have never tried, the marinading onions in balsamic vinegar. the onion bun is also a good idea. i like ON The Fly's method too. i think we can all get some good ideas from this thread. good luck.

I like to add finely diced jalapeno and onion into the meat along with salt, pepper, and garlic powder. My rule of thumb, don't over-handle the meat...patty it somewhat loosely and flip it only once...never press it when grilling unless you want it dry (cooked med. rare for me)! Grill over charcoal and add bacon on top, then melt pepper jack cheese over that. I toast a ciabatta roll and add mayo and a bit of mustard. Fried onions and mushrooms (morel season soon) are always welcome. Of course, there is always more bacon, too!

I picked up a recipe for garlic butter burgers a while back. I haven't made one for a few years, but it's simply to melt some butter in a pan and saute some minced garlic in there. Then dump the butter/garlic into your mixing bowl with the ground chuck. You can reserve a little bit of the garlicky butter to pour over the top of the burgers as you flip them.

hey, like brushing ribs. could be the begining of a new thing for starters. make the butter garlic mix. put the burger on the grill and brush with mix until done to your liking and then add on the many variations mentioned above to boot on grilled bun or just lettuce tomato and how did we forget bacon. keep the ideas comming. everyones input is important. grilling season is now. i like this basting the burger deal with garlic butter. let's hear some more. good luck.

If not butter, oil for sure... A light brush of either will give the outside a better char and seal in the good juices by accelerating the searing process. Everything gets a light brush of oil on my grill smile I like the idea of garlic butter, too.

Another favorite of mine is to grind up a pound of bacon with a pound of venison (coarse), then season with fresh minced garlic and minced onion, cayenne pepper to taste, salt (not too much as the bacon adds some), then grind again (fine), patty them up and then it's onto the charcoal. Top with sauteed mushrooms (or jalapenos) and melted swiss and your mouth is in heaven.

AHHHH the quest for the perfect obnoxious burger! Always trying... always improvising... never stationary.

Last year at our city festival, my buddies and I cooked burgers a bunch of different ways, one that really stood out as different and was surprisingly good was the now named UFO burger...

2 qtr pound patties with some cheddar sealed up in the middle... a good quality steak rub on the outside...

We grilled these till the cheddar was just starting to bubble on the outside, move off the flame and throw a small pad of butter on them and another slice of cheddar or American cheese...

Then for the topping... a bigger - thick slice of Canadian bacon, put a slice of swiss cheese on top of it, an onion ring on the cheese and crack an egg inside of the onion ring... had a cast iron skillet on the grill already hot... after putting the egg in the onion ring, we put a lid over the concoction till the egg was sunny side up leaning towards medium side up... a little garlic butter on the buns and a quick toasting... burgers on the buns and the wole UFO topping on the burger ... I threw a good shot of Smoked Chipoltle Tobassco on top and walla... the messiest, craziest burger I've had to date...

Pretty good too boot.

Good Luck!

Ken

The best burger that I've had in my lifetime was in NY city at a kosher steakhouse. I ate their lamb burger and it was outstanding. So was their regular hamburger. Some of us traded bites. I'm a big ground lamb fan in the first place, so I'll have to try making some of those at home now.

lamb has a unique flavor. and i agree it would make a great burger. the only problem is price of lamb. when i was still working we sold some frozen in one pound tubes. i bought a couple and brought it home and was amazed how lean it was. i used it in a tasty hot dish instead. good luck.
