deerminator
Most restaurants aren't serving truly wild game I know, but where's your favorite place to go, wherever, for game meals outside of your kitchen or dining room? I know I've had some freakin awesome venison tendloin and braised rabbit at Bobby Flay's Mesa Grill in Las Vegas. And some pretty dang good orange glazed duck breast at Antons in Waite Park. Would love to hear other people's experiences.

ThunderLund78
Schumacher's in New Prague is back open and it's great. Elk Steak, Goose, Salmon etc. Probably farm raised but still, something you don't get at your average restaurant. And Chef John is as friendly as always. We were greeted at the front door by he and his wife and he gave us a personal guided tour of the kitchen before we sat down. It was a very unique and friendly experience. Not to mention a fantastic meal.

Quetico
If you get over to Madison, theres a place just out of town a bit called Morel's. Very good. Best duck I've ever had. My brother loved the Elk tenderloins. They also have pheasant and venison along with caribou and bison. I've never been to the Refuge but plan to go there just to get kangaroo. I ate it in Australia, simply amazing taste. Don't pass on the opportunity to eat some Kangaroo. Also realize that cute cuddly symbol of Australia is actually an becoming over populated down there. Quetico
'Roo is spendy? I've never seen it up here in the states. In Australia its cheap and tasty. Any clue of a market I could get it up here? Where do the restaurant's get it from?
Tom Linderholm
Quetico, here is a few to look up, Prairie Harvest, Valley Game and Gourmet and Venison America. Look them up online, they have a nice spread of items.
caseymcq
As for Kangaroo, love the stuff, too bad it's so spendy. Just out of curiosity, are you guys serious? Or is this like buying a can of dehydrated water?
Tom Linderholm
Nope Casey, totally serious, I have used short loin in a few different applications. The closest comparison in my mind is fresh speed goat backstraps.Quetico, I noticed they didn't have a list price, last time I purchased it was $22 a pound. Quetico
Casey I spent 3 weeks in Queensland (northeastern province) Australia about 5 years back. I was there doing an environmental study. Kangaroo is on the menu in many decent sit down style restaurants. Kangaroo is a heavily utilized animal in Australia due to their abundance. Kangaroos have great flavor. Its a very good eating animal. Their fur is extremely soft. If you ever get a chance to try it I highly recommend it.
Quetico
Tom- Thanks for the heads up on the meat suppliers. The Venison America lead me to Specialty Meats and Gourmet in Hudson WI. My sisters bf goes through Hudson often. He's hopefully getting me some kangaroo steaks yet this week.If so we'll have them for guys weekend at Caribou Highlands Friday morning. Quetico
With that said I was just informed the USDA has temporarily ban it from the states due to the meat always testing positive for salmonella. It will be several months before you find any 'roo for sale in the states.
caseymcq
Wow, I would never have thought of it. If I ever have the opportunity I will have to try it.
