What's for Christmas dinner?

Going with beef this year. Was a toss up between Tenderloin in a salt dough or standing rib roast or a New york strip roast.

I usually do the standing rib roast when I go with beef. This year going with the garlic and herb New york strip roast. Be doing it in the oven to ensure a good crust. Thought about doing it in the salt dough but not sure how well strip loin will come out.

Side dishes I'm not sure except for the mushrooms, potatoes and asparagus. Pretty basic but always good.

Oh, the 12 lb strip loin roast kinda helped decide and the leaner cut over the standing rib helped also and half the price of tenderloin. I just hope its good meat.

I was makeing soup earlier and was thinking of starting a thread about what people make for christmas eve and/or day...

Christmas eve for my family is the big day. Growing up it was always a big event on my fathers side of the family. 20-25 people at my grandparents for a "traditional" polish meatless meal. Nothing fancy, but very good! We always had wild mushroom and barley soup, fried walleye, boiled whiteing, homemade mac n cheese, and perogi's. Plus lots of homemade cookies...

This has evolved into dinner at my parents with my sisters and thier famlies. I do about 98% of the cooking and bartending. I get into a zone and have a ball with it. Today after work I made wild rice n mushroom soup with 6 diff kinds of mushrooms for with the meal. We'll have shrimp cocktail with beverages to start, two kinds of homemade mac n cheese - 3-4 kinds of cheese in both but one will have chopped tomatos in it. I also make perogis still. Some with fried onions and butter and some in a roasted red pepper and cream sauce. My dad will make fried walleyes like his dad liked them - flour then eggs, then seasoned breadcrumbs then fried. I love scallops so i'll make a batch that are pan seared then finished in the oven with a parm tomatoe cream sauce. 6 of us like lobster so we each get a small lobster tail i'll cook under the broiler. I may add some saute'd shrimp finished in some sweet n sour sauce as my mom dosnt care for seafood but like shrimp when I make them this way.

Yep it's a feast! But I really look forward to prepairing each year. After dinner we slug around and take our time opening presents from each other.

Christmas day is usually just a lay around n do nothing type day. We have leftovers and my dad will make some kielbasi to go with...

The past few years has been christmas day with my girlfriends family. It is usually a baked ham with all kinds of sides...

Thought being it will be such a nice day I am grilling a turkey.

The one on Thanksgiving turned out so good I am going to try another one.

Now that sounds fun and tasty. You may want to put an umbrella over that grill and be sure its not under a tree branch with a lot of snow. grin

That sounds like a blast. I hear you on the zone thing. I do most of the cooking and its fun, lots of work but rewarding and fun.

The Polish meatless menu looks awesome. I think I'll look into doing something like that in the future.

I thought that reindeer might be nice. But all the exotic meat dealers wee out of caribou, so I guess we'll do the old traditional ham. I've got some smoked salmon and pickled herring too.Maybe a little lefse for the Norwegian side. Au Gratin potatoes for the German side. No Swedish meatballs this year though.

We typically have frozen pizza between Christmas Eve services at church, but this year I decided to do it up a little fancier.

Cider brined turkey, mashed potatoes, corn on the cob (frozen from this summer), home made bread, lefse, and an assortment of Christmas cookies.

jimalm - they are similar but differnt. Ocean whiting are similar to cod but more like a big smelt. Search whiting and you'll get all kinds of info.

This was a dish that mostly the older folks liked. It was just boiled with onions and salt n pepper. Then you had to pick the meat off the "frames". It hasnt been part of our meal since my grandparents passed. Maybe i'll make a small batch for my dad if I can find it...
