A huge platter of Nachos.

1-lb. Ground Beef, browed, spiced like you do for tacos.

1 8 0z. pkg. each shredded monteray Jack and sharp cheddar.

3-4 diced and seeded roma tomatoes

2- diced Avacados

1 C. chopped Black Olives

1/2 C. or MORE thinly sliced fresh Jalapeno's

1-can rinsed and drained black beans.

Dollops of sour cream and a big bowl of salsa

OPTIONAL--1-C. freshly chopped Cilantro

Procedure:

heat oven to 375 degrees and place tortilla chips onto a large oven-proof serving platter, sprinkle on cheese, taco meat and sliced jalepeno's. bake 5-10 minutes until cheese is melted. remove from oven and arrange the remaining ingredients on top the pile and serve immediatley with beer-a-rita's and Marguarita's

Serves 8 regular people or 4 linebackers

Love Buffalo wings with Celery and Rach/Bleu Cheese and Beer...

but lately it has been Quesidillas with Chicken and fixins and Beer... or Pizza and Beer... I would settle for Chips/salsa and Beer. Pretty much anything and Beer now that I think about it.

For the first Vikings game this year I made:

1. A platter full of chicken wings on the grill (tossed them in misc seasonings and olive oil before grilling)

2. Little Smokies in BBQ sauce in the crock pot.

3. Salami, 2 cheeses and cracker tray

4. Carrots and celery with a ranch style dip

5. A friend brought over a case of Oktoberfest beer, a brand I have not heard of, and they washed everything down perfectly.

Everything tasted great, my friends enjoyed everything, and the Vikings won!

Amen Riverrat.

Try this on your deep fried wings.

1 bottle of louisiana hot sauce

2 cups brown sugar

1 stick of butter.

Mix all together in a sauce pan and reduce down to thicken. Pour over your well done wings. Add cayenne powder to the sauce to bump up the heat some if you like.

My wings are pretty simple, I bread them in Shore Lunch Buffalo Wing breading. Fry until crispy (about 2-3 mins after they are acctually done and floating) and then I toss in sauce.

Depending on the crowd and there likeness of hotness (does that make any sense??) For milder wings I use 1 bottle Food Club Wing sauce, 1 stick of butter, and about 2 minced cloves of garlic. Or for hotter wings I use Franks hot sauce.

When I have made wings for poker night, I fry them all unseasoned, and keep them in the over at 200degree's. I them have 3 or 4 different gallon zip lock bags on the counter and tell the guys they can make their own wings with the 3 or 4 different sauces in the bags. I show them how to make a batch and leave teh oven on with the wings inside. You would be surprised how well it works......Since BW3's is just up the street, a couple of the guys will volunteer to get the sauces....

about an hour (4 beers) frying in the driveway in the late afternoon makes for a tasty evening for 6-14 guys. I won't make wings for 14 guys again. we started the fryer up again at 9:30 the night we had 14 guys.....

Well, took everyone's advice and made a BUNCH of wings tonight. So easy! Fried them up in vegetable shortening (friend of mine works at a restaurant and recommended this) with some salt and pepper on them, and made two different sauces. These are two of my favorite sauces from BWW that I made copycat recipes for:

MEDIUM WING SAUCE:

1 Cup Franks cayenne pepper sauce

1/3 Cup vegetable oil

1 Teaspoon granulated sugar

½ teaspoon cayenne pepper

½ teaspoon garlic powder

½ teaspoon Worcestershire sauce

1/8 Teaspoon coarse ground black pepper

1 egg yolk

2 Teaspoons water

2 Teaspoons cornstarch

Combine first seven ingredients for the sauce your choice in a small saucepan. Heat sauce over medium heat until boiling, reduce heat and simmer for 5 minutes. Remove from heat and allow it to cool, uncovered, for 10 minutes.

While the sauce cools, whisk egg yolk with 2 teaspoons water in a medium bowl until pale yellow. Whisk in cornstarch until dissolved.

Drizzle the hot sauce mixture into the egg yolk mixture in a steady stream while rapidly whisking. Cover the sauce and chill until ready to serve.

If you want this sauce spicier, just increase the Cayenne Pepper. I wouldn't go much more than 1 1/2 teaspoons tho.

ASIAN ZING:

2 teaspoons cornstarch

4 teaspoons rice wine vinegar

1/2 cup corn syrup

1/3 cup sugar

1/4 cup chili-garlic sauce

1 tablespoon soy sauce

1 teaspoon lemon juice

1/4 teaspoon ground ginger

1/4 teaspoon salt

1/4 teaspoon garlic, minced

.

Dissolve corn starch in rice wine vinegar in a small bowl and set aside. In a small sauce pan combine remaining ingredients. Add corn starch mixture and stir well.Heat mixture on medium heat, stirring often until sauce reaches a boil and thickens. Remove from heat, and cool. Cover and refrigerate until ready to use.

The "Zing" sauce tastes quite spicy out of the pot, but once it gets on the wings with some Ranch or Blue Cheese dressing to dip in it's not what I find overly spicy.

A few Oktoberfest beers on the side and some celery...MMMMM!

I do the same except to cut down on the calories.....bake them at 400 gegrees for 20 min.Turn them over and another 20 min.I eat them right out of the oven....but a buffalo wet sauce can be added when you take them out.Taste the same as deep fried but a whole lot better for you.Shore Lunch Buffalo breading is very good made this way.
