This past weekend, my future mother-in-law gave us some duck from last year that she didn't want cluttering up her freezer anymore.What would be some good ways to make them? 1tofish Posted September 4, 2007 Share Posted September 4, 2007 I've posted this one before, it's an easy, and very tasty crock pot recipe.1 package dry Itailian Seasoning mix1 package of dry Au Jus1 can of Beef BrothDuck BreastsPut the breasts into the crock pot and pour all ingredientson the duck. Superduty Posted September 5, 2007 Share Posted September 5, 2007 I made a lot of duck and goose jerky last year. My hunting buddies and even a farmer(He hates the taste of wild duck) gobbled it up. B@ssmaster Posted September 5, 2007 Share Posted September 5, 2007 One recipe that I have done that is really simple: Breast out the duck into strips, wrap the duck strips around a medium or hot Jalapeno pepper slice, wrap that in a slice of thick cut maple bacon, skewer a bunch of these little babies together and toss on the BBQ. Before this recipe, my son would tolerate duck, my wife would not eat it at all. With this method, ducks do not last long around our house anymore! And as a little pre-treatment, there is the standard soak of the duck strips in salt water for a little while to help pull out some of the stronger flavor. Tripleplay Posted September 5, 2007 Share Posted September 5, 2007 Cubed and then soaked in apple juice (cider cooks it a bit much) and I've also had soaked in cold coffee. Wrapped in thick cut bacon and cooked on the grill.Father-in-law swears he would have liked eating ducks more for all of his years if he had them this way earlier in his lifetime.(I love water chestnuts so that is a definite future upgrade from Dietz's version for me!) Nate McVey Posted September 7, 2007 Share Posted September 7, 2007 Don't forget the old bacon wrapped brest stuffed with jalapenos and cream cheese. You can grill them or pan fry them.
