MEATLOAF...

Who doesn't like a good meatloaf? Here's one I made tonight...

MEATLOAF

Preheat oven to 375 degrees

• 1 Lb hamburger

• ½ cup onion fine chopped

• 2/3 cup saltine crackers. Put in plastic bag and roll with rolling pin.

• 1 egg and 1 Tablespoon milk-mixed together

• 2 Tablespoons ketchup

• 1 Tablespoon Heinz 57 sauce

• Salt and pepper

• Hot pepper sauce (optional)

Mix all ingredients together and form a loaf in a broad, shallow pan. Coat with ketchup and put in oven for 30 minutes @ 375 degrees. Then lower oven to 350 degrees for another 30 minutes. Let it sit for 10-15 minutes before serving.

Meatloaf is great in that you can add just about anything to it and it turns out great. grin.gif

One thing I would suggest is to add some pork, or spicy Italian sausage to the mix.

My recipe is pretty basic:

2 pounds lean burger, 1 pound beef and 1 pound ground venison is a good combo

1 large onion chopped up - I like onion

1 cup oatmeal

1 egg

1 cup tomato juice

Salt and pepper

Mix all ingredients together and bake 1.5 hours. Throw in potatoes at 1/2 hour mark. Last 1/2 hour if I'm around I'll mix together some ketchup, brown sugar, and mustard and smear across the top. That’s also a good time to drain any fat off the meatloaf.

This recipe used to be on the Quaker oatmeal box but since they started emphasizing 'heart healthy' they don't print it anymore!!!

Need to try that 'standing time', I'm usually ready to eat and the first few slices are not firmed up...

That's why I added the pepper sauce. I use this "srirachi" pepper sauce in the asian section...really HOT! Can also add some jalapenos!!!

The way I like to make it is to spread hamburger out pretty thin and just wide enough for a bread pan and put pizza sauce and some basil,oregano or what ever Italian seasoning you have on hand all over then put mozzarella cheese all over it and roll it up and put in bread pan and then put some sauce and cheese on top. To help with rolling it up I spread it out on some Saran wrap so that I can lift the wrap to get the meat started rolling into a loaf and try to pinch shut as much as I can.It makes great cold sandwich's the next day and seems to have more flavor.

2 - 3 LBS of burger

1 to 1 ½ tubes of Ritz Crackers

½ cup of onions chopped up

1 green pepper chopped up

2 eggs

Jalapeños to taste

salt, pepper, garlic salt (to taste)

couple shakes of Worcester sauce

4 shakes of Teriyaki sauce

Mix it all up/ divide in half and bake till done. 350 for a bit over an hour. That way you have 2 of them, one for supper and one for sandwiches the next day. That is the sandwich of choice that I make every year for duck season opener. MMMMMM Take care and N Joy the Hunt././Jimbo

I don't have the recipe at hand, but I made some using a pack of Stove Top stuffing instead of the bread/cracker crumbs. Other than than, it was a basic meatloaf recipe and maybe had just a bit more liquid in it than normal.

Here is my favorite of many recipes we've tried...

2 lbs ground beef (I actually use 1 deer or elk and one beef)

1 package Jimmy Dean Regular Sausage

1 large onion chopped

3 tsp. salt

1/2 tsp pepper

24 Ritz or Townhouse crackers crushed

2 lightly beaten eggs

1 1/2 cups milk

Mix all together in a very large bowl. Put into to TWO large loaf pans bake at 360 for 1 hr and 15 min.

ENJOY!

PS I'd like to hear if anyone tries this and likes it or not...

    • If you really want to treat your wife (and yourself) with a remote operated trolling motor, the Minn Kota Ulterra is about easy as it gets.  Auto stow and deploy is pretty awesome.  You just have to turn the motor on when you go out and that the last time you have to touch it.   24V 80lb.  60 inch shaft is probably the right length for your boat.  They ain’t cheap - about $3k - but neither one of you would have to leave your seat to use it all day.
    • Wanderer, thanks for your reply. I do intend for it to be 24 volt, with a thrust of 70-80. Spot lock is a must (my wife is looking forward to not being the anchor person any more).  With my old boat we did quite a lot of pulling shad raps and hot n tots, using the trolling motor. Unlikely that we will fish in whitecaps, did plenty of that when I was younger. I also need a wireless remote, not going back to a foot pedal. We do a fair amount of bobber fishing. I don't think I will bother with a depth finder on the trolling motor. I am leaning toward moving my Garmin depth finder from my old boat to the new one, just because I am so used to it and it works well for me. I am 70 years old and kinda set in my ways...
    • Dang, new content and now answers.   First, congrats on the new boat!   My recommendation is to get the most thrust you can in 24V, assuming a boat that size isn’t running 36V.  80 might be tops?  I’m partial to MinnKota.     How do you plan to use the trolling motor is an important question too.     All weather or just nice weather?   Casting a lot or bait dragging?   Bobber or panfish fishing?   Spot lock?  Networked with depth finders?  What brand of depth finders?
