Heck we are having left overs today.  Made a big pot of soup last night, enough for two days.  If it's good I say make enough for two days.  I was going to make chicken noodle soup and I did everything the same except used ground beef for the meat.  Great flavor.  Your wife is right.  A lot of food get's wasted and that is a pet peeve of mine.  I grew up poor.  When we came over from Germany I remember eating a lot of potatoes [with salt for seasoning].  A farmer came by one day and kept my mom supplied with milk and butter.   Man that was a treat.  Ate a lot of wild game and fish.  Something I will never forget.  However when we got on our feet, we ate better and better but keeping traditional meals the whole time while still living at home.

Hard to explain that to kids at times in these days of fast foods and more.  I guess the reason we have leftovers at our house a lot of times is that I just don't know how to cook small meals.  Even though there are only three of us at home.  Most recipe's I double up on or more.  Some recipe's say serves 4 for example.  Four what?  Barny Fife or the members of a football team.  I don't go by serving portions on any recipe.   That's probably a good reason for left overs, LOL, but I'd rather be on the more side than less.  i'm not a wealthy man, not into material things much, but one thing remembering the past, I make sure we eat well.  good luck.

As far as leftovers go - EVERYBODY knows that things like soups, Chili and dishes with lots of ingredients like hot dish, lasagna, etc  are ALWAYS better the next day!  Takes a while for those flavors to mingle and get along

RH - My Grandpa was an immigrant from Latvia - he made a great burger soup - I believe it was called "Frikadile" - not sure if I spelled it correctly.  MAN it was good stuff.  It was basically like you described, chicken noodle soup but with ground beef.  He also added cabbage for a real Slavik-European flavor.  My mom has an old Latvian-American Cookbook that I need to get my hands on.  Tons of great stuff in there.

because of what I cook we end up with leftovers in the fridge.  Most of the time they are had for lunch a day or two later  but generally not for dinner.   I think that's why I always cook a little extra.   Also, it would be pretty rare if we had a similar meal two nights in a row.  If we have fried chicken tonight we aren't having chicken stir fry tomorrow.

I'm going to go out on a limb and say if you have leftovers that that means the family sat down and had a good meal together.  When I was a kid we had a family dinner 6 or 7 nights a week and just through habit Deb and I do the same thing with our kids (they are 15 and 17 so sometimes they are out and about with friends) and yes we say grace without fail.   Maybe about once every two weeks we annouce "eat in whatever room you want" night when there is a football game on or something.

I do get the miscommunication about who's making dinner.  I'm the cook and Deb's the cleaner but last night we had a dinner Christmas party and nobody had made dinner for the kids.  I got ticked and let her know I didn't have to make dinner every night.  More a communication problem than anything.

Hope your kids didn't burn their mouth on the pizza rolls.

Why, you lop-eared mongrel.... :P

I think a lot of it may go back to those of us that grew up in the 60's. Economy was good, and Mom made good, hearty meals, but her and Dad grew up during a tougher time, so there was the "You don't waste food" "starving kids in China" mindset sort of thing. Reheating a plate of leftovers was a natural thing to do.  You made do with what you had, not the grab and go no planning quickie dinners like today.

My wife and I plan to have leftovers so that we have lunches to take to work or so that we can get more than one dinner out of it.  There isn't a lot of time to cook dinner after leaving work and picking up the kid at daycare so we do what we can to make our life easier.  We'll often plan a bigger meal on Sundays when we have more time to cook that can then be made into at least one or more meals later in the week.  This last Sunday I roasted a whole chicken.  It made a great Sunday meal and the leftovers have been turned into chicken sandwiches for lunches, chicken quesadillas, and southwest chicken salad all with little extra work.

My wife made a lasagna last night to have for dinner tonight and she made extra sausage and ricotta that be used to make a baked ziti for later in the week.

I also recently made a batch of elk/venison/pork meatloaf and made them into small individual portion sized loaves.  We had them for dinner once and I had them for lunch once and we are left with 6 more individual loaves that I vacuum sealed and froze for another day.  Quick thaw and reheat and I've got another easy meal.

We didn't have a whole lot of money when I was a kid, so we were taught to eat left overs. We ate a lot of hot dishes, goulashes, and so on. My mom was, and still is a great cook, she worked in a bakery for 25+ years and it always amazed me what she could whip up, with minimal ingredients. Anyway, we try and have a nice sit down meal once a week or so, but my kids are getting older and busier, so that does not always happen.

As far as leftovers, I am a big fan. I still when making soups, or a hot dish make plenty, and I will usually eat what's left.

It's just as easy for me to cook up 3 lbs of chicken as it is a pound. Who wants to fire up the grill for one pig chop? That way too, I know supper is taken care of for the next nite, and I won't have to fiddle with anything. i usually do that the nite before my weekly car shows or gun club meetings, that way I can heat 'n eat, and zoom out the door.

I love leftovers!!!!!!!!!!!!

Me too.  It is only the wife and I and I always make big meals.  I can eat the same thing like soups or spaghetti or roasts 3 days in a row and love it.  My wife isn't quite into eating the same meal so many times in a row.  Sometimes I will make 2 or 3 meals on a weekend so we can have different leftovers all week.  Sometimes we have what my wife calls "fend for yourself" nights.  We eat whatever we want.  Usually when the frig has lots of leftovers.

I love leftovers! Chili is always better after a day or two.

My favorite leftovers are after making a roast with potatoes and carrots. Cube it all up and fried in butter or olive oil... maybe even fry an egg or two to put on top!
