Campfire Cooking

Taking a group of kids camping and trying to come up with some ideas to keep them entertained. Been looking online and for sure are going to do these two. Just did a test run on banana smores....well did not have graham crackers .....and bread stick twists. So does anyone have any favorites they would like share?

If you can get your hands on some pie-irons, campfire apple pies are out-of-this-world!

You can use white bread, but I buy the pre-made pie crust dough in the freezer section.  unroll it, cut it into squares a bit larger than the iron, brush one side of each square with melted butter and sprinkle it with cinnamon sugar.  Put a square on one side of the iron, buttered side down, fill it with canned apple pie filling, and put the other square on top, buttered side up.  Close the pie iron over it and the edges should pinch together.  Put it on a log sitting on hot coals for 3-5 minutes a side. You can open and check it every so often to make sure it's not burning.  YUM!

You can also make calazones or stuffed hot sandwiches with these.  A good investment for cheap, and the kids love em.

For Cub Scouts we cooked a hamburger in an orange peel. I wouldn't recommend making that your primary meal as it works but isn't the most attractive meal. Did the banana thing as well. Marshmallows, chocolate chips, etc in a waffle cone wrapped in foil was a hit for dessert. Individually wrapped hobo meals, made by each kid (and to their liking) also went over well. Nice because it gives them a veggie option and they own it.

If you are cooking with a Dutch oven this is an option over a campfire

Pinto Bean Bake This thick hearty stew can be made with any kind of beans, including chili beans or kidney beans. Serves 4 Preparation time: 10 minutes Cooking time: 45 minutes Ingredients 1 small onion, chopped 1 1/ 4 cup white rice 1 1/ 4 cup beef broth 1 (26 oz.) can pinto beans, rinsed and drained 1 1/ 2 lbs. ground chuck 1 teaspoon cayenne pepper 1 teaspoon of salt 1 teaspoon cumin 1 teaspoon fresh basil, chopped 2 cup zucchini, shredded 1 (14 oz.) can petit diced tomatoes

 

Directions In a mixing bowl, combine beans, ground chuck, chilies, salt, cumin and oregano until well blended. Set aside. Spray the sides and bottom of a Dutch oven pan with a non stick cooking spray. Spread the onion and rice evenly over the bottom of the pan, and pour the water over the rice. Smooth the mixture into an even layer.   Drop spoonfuls of the meat mixture into the pan. Spread the zucchini over the meat mixture and top with the diced tomatoes. Cover and bake 45 minutes or until cooked through.

Cheesy Mushroom Grill Bites Serves: 4-6 Preparation time: 15 minutes Cooking time: 10 minutes Ingredients 12 mushroom caps 12 slices of Swiss cheese 12 slices of cooked ham 12 pineapple chunks, fresh or canned Olive oil pinch of salt Directions To prepare, pop off the mushroom stems and slice the top of each mushrooms, so it has a flat top. Place a cheese slice and ham slice on each mushroom top.   Add a chunk of pineapple and secure layers with a toothpick. To cook, brush each mushroom base with olive oil.

Sprinkle each mushroom with salt. Heat the grill to medium. Add mushrooms to the grill so that only the mushroom is touching the grate. Grill for 5 minutes or until cheese starts melting.

Thanks guys. Think Bobberineyes nailed it ....in that I should probably keep it simple. Suppose the  kids could probably care less. Hot dogs on a stick and a couple bags of cheetos  would probably  be sufficient. Love the pie iron possibilities , but not ready to fork out a couple hundred yet for 10 or so. This is for a non profit and if anyone sees a good deal on them....let me know. Looking like tinfoil pouches and do have a couple cast iron dutch ovens.......
