Talking with some folks they've kept a loin in the Brine for 3 weeks.......I think I will take it out tonight and just get home early tomorrow from work to smoke it. I got two 5 pound pork loins from Cubs [1.99 lb.] and will put them in a brine tomorrow for the 9 day countdown. Will pick up a few more loins this week. I'm doing 2 - 2.5 pounders from Costco and I have the inner part of a crock pot that might work out... Maybe I'm over thinking again but I figured instead of jamming everything in, trying to keep a more flow of brine around all sides if possible. ... When I pulled it I cut each one in half again so that I could get a slice out of the middle to confirm the cure went through and to do a test fry to check the salinity.....YUM!
