mrklean
I thought I read on here before a few of you have smoked eggs, I was wondering do you brine them or just toss eggs in the smoker? Picked up a smoker the other week and am having fun trying different things, gonna try some smoked pike tonight
eyeguy 54
smoking more in 30 minutes. no brine. peeled and on top rack. 145 for 30 to 45 minutes. Apple and cherry are dandy. hickory or mesquite for a little more flavor. Apple is becoming my favorite. have fun !
eyeguy 54
forgot to mention. I close the top vent for eggs.

hockeybc69
The trick to not get them rubbery is smoke them as low of a temp as possible in my opinion.... I think all that's happening is they are already cooked when they go in, and they just get cooked more which is too much....

huntnfish
I've smoked eggs a couple times and like to cold smoke them when I'm doing some cheese. I usually do cheese in the 80-100 range. The eggs aren't rubbery at all.
eyeguy 54
never have smoked them in the shell. might be tough to peel and no idea how long to leave in. been smoking them for almost 30 years. I still have not figured out what is wrong if the whites get a we bit tough (or rubbery to blb). Seam almost like a pickled egg. 145 for 45 minutes has made my taste buds happy many times. minnesotathorn
mine always get rubbery. about the same as pickled. read somewhere that putting a tray of ice in would keep temps lower. going to give that a try today.

SkunkedAgain
FYI - At Rainbow last night in Richfield they were selling 18 eggs for $0.99 each. I bought three of them and my first throught is to smoke them for deviled eggs. We've got a party coming up in a week that we just found a $3 appetizer for!
