Smoked a Fatty

A fatty is a snack that goes with a beer..... Now, for a wine and cheese type of an affair you should call it a Fa-tay, and tell folks it's a french appetizer. Heheheee. Trust me, I've done it. Mrs ~t~ just rolled her eyes.

I don't ever know what kind o wine I'm a drinkin, the paper bag is always covering up the bottle grin yours just looked fancy.

many ways on g o o o g le. I like a pound of venny, a pound of hot italian sausage. mix in hot temp pepper cheese, craisins. rollup in a bacon weavw and smoke. pics on here somewhere but i couldn't find them.

I've made something basically like that before but never smoked it, just baked like a meatloaf. I tried searching "how to smoke a fatty" but the results didn't have anything to do with cooking meat. Any idea why they're called a Fatty?

Well, not to answer for Gordie, but look up "Curley's Sausage Kitchen" and you can find seasoning for $7 plus shipping to do a 25lb. batch.

I'll check into that, thanks. I found some at Cabelas but it was about $20 for a 25 pound batch which I thought was a little high.

Smoking the one or two pound store bought logs of sausage has been popular with BBQ folks for years. Many are breakfast flavored sausage (like Jimmy Dean brand for example) but you can also find "hot" and even Italian sausage in tubes. When seasoned with pepper then your favorite rub the flavor is delicious, especially the breakfast flavored ones. Stuffing them came along later, and the latest thing is the bacon weave outer layer.

Back to your question.... 6 or 7 years ago on one of the barbecue forums there was a contest of sorts to name them something other than smoked sausage logs.... A guy whose nickname is Bigdog came up with the name "fatty" and it stuck.
