Cooked up some of our recent birds:

We have a Goose Pot pie

2 mallards brined smoked and finished on the grill

Goose breasts brined butterflied pounded flat stuffed with garganzola and raspberry chipotle sauce rolled and warped with bacon and cooked med rare on the grill

More geese than you can shake a stick at around Rochester. Bet if you asked around some nice farmer might let you take a whack at some.

I should take a camera, there were like a 100 canadas grazing next to Costco a couple days ago.

What do you use for the pot pie crust? We have used filo dough and it works good but I would like to try something else on my next pheasant pie.
