A sharp knife, two or three pairs of surgical/ latex gloves ( keep them in an inside pocket, they rip when cold) and 10-15 feet of Para cord. You just never know when you might need some rope..........I always have snacks in a ziplock baggie, way easier to open quiet than a granola bar wrapper.....water too

My pack has most of the thing you all have listed.

Knife or 2

rope

headlamp

latex gloves

If its wet bring extra gloves, socks, hat

quiet snakcs

water

map of area

compass

matches

shop rags or something to wipe down anything that gets bloody

I might bring a tarp or heavy plastic to wrap the deer in if I think I may have to drag it along ways, or I may just run back to the truck for it if needed. Can help deduce friction and keeps the body cavity clean if you have to drag through alot of dirt or debris.

Thats all I can think of off the top of my head.

Deer hunting is one of those great things that you can do as cheap as you want, or spend as much as you want. Some things I don't go out in the field without are extra layers, a grunt call, rattle bag or rack pac. In my bag I'll have a book, snacks, good stocking hat and I'll have my knife and latex gloves as well as my headlamp. I always buy a box of latex milking gloves and a box of sleeves from ff. The sleeves I'm talking about are used for pregnancy checking and AI's in cattle. I am still using the same box of sleeves from about 5 years ago, and I use the blue latex gloves for cleaning more than just deer, a box of those usually lasts a year. I use them all the time for processing our deer. Those two boxes last a long time and will only cost you about 4x more than than a field dressing kit. I roll the sleeves into the blue latex gloves and then put them in a bag. This is generally what I take for my all day sits. If I am only able to sit for a couple hours, I leave the bag in the truck and just grab my gun, shells, and call and go.
