German recipes

We are having our annual family German "Oktoberfest" in a couple of weeks. We make potato dumplings, different kinds of brats, a sweetened, thickened saurkraut that my Polish grandmother made, a red cabbage salad. I might bring over some of that recently smoked Canadian bacon too. Does anyone else have any "knockout" german recipes for side dishes, appetizers or deserts? When I was a kid, we would pretty much make a meal out of the potato dumplings and maybe some bacon or salt pork on the side. My dad used to pour bacon grease over the dumplings but I preferred butter! smile Thanks.

well i got a couple of weeks yet. i have to ask my mom for some ideas as well. Jim, what you are having already sounds good. i was raised basicly with real potato dumplings, saurkrout with bacon, red cabbage, and a pot roast as one meal. one thing i have right now for an idea is Roladen. i have the reciepe here somewhere or i will put it up again. i thought we had a German recipe thread on here somewhere. i have to go up to Duluth right now to meet up with my brother so i dont have the time but i will when i get back. good luck.

Spaetzel is a very good German dish and I've made it before. Maybe add it this year. It would be easy to make up ahead of time too. Thanks

One of my favorite dishes when I was stationed in Germany. Just not Spatzle but Käse Spätzle. A german version of mac and cheese. Do a search and it will be easy to find.

Beer is a given!! I'll check out that Kase Spaetzel too. Thanks....My mouth is watering already. Potato dumplings alone is such a mouth watering treat for my sister and I and 4 of 6 kids and their spouses. I don't know where I went wrong with two of them!!

Thanks for posting that recipe for rauladen. now, for the guy's who bake and want to make authentic german cakes ect give Dr. Oetker's products a try. my mom still uses his stuff to this day. i think you can find them in the specific "country" or "ethnic" sections in the grocery store. Lunds probably has a greater variety. good luck.
