reinhard1 Posted April 21, 2011 Share Posted April 21, 2011 this easter i am making rouladen, [with some of the best gravey in the world] real authentic german potato dumplings and for a side dish my most asked for side dish--sourkrout with bacon and all the drippings. some corn also. some kids just aint into sourkrout yet. pies, buns, venison summer sausage for snacks along with pickled pike. so what's on your menue???? good luck. The kraut dish sounds really good. Share that reciepe ? I'm only allowed to eat kraut a couple times a year, and never before ice fishing , adding bacon is an excellent idea. reinhard1 Posted April 21, 2011 Author Share Posted April 21, 2011 sure, the krout with the bacon reciepe is in the cooking and reciepe forum under the thred "hey Reinhard a ? for you [along with the dumpling reciepe]. the rouladen reciepe is under the thread "Reinhard do you have a rouladen reciepe"? actualy the hardest of the three is the dumpling proceedure. my youngest daughter is the only one of us that gets it right every time. it's all about the texture in the end with the dumplings. good luck. thirdeye Posted April 22, 2011 Share Posted April 22, 2011 I'm kind of undecided on Easter.... I might do a pork loin roast on the smoker. Or maybe just brine and roast a chicken and grill it. Edit... just got a call from Mrs ~t~, she found some great lookin baby back ribs at the market for Easter. As far as what's cookin this weekend, that's another story.... Today I started soaking 2 store bought corned beef brisket flats, I'll be using them to make pastrami on Sunday. Mrs ~t~ is taking a meat and cheese tray into work on Monday. I also have a bunch of green chile's and poblano's that I'll roast with my weed burner this afternoon. We're making a big batch of green chili this weekend, mostly for the freezer and some for giveaways. I will keep a few of the poblano's and make some of these open face bean boat thingies.... Maybe I got my "i"'s and "e"'s mixed up....I meant that I was making the green chili for the freezer. In your neck of the woods maybe they call it pork chili. It calls for ground pork butt, green chile's, tomatillios, serrano's, poblano's, seasonings and broth. It has no tomato products or chile powders so it's really green. As far as the chile's go, after roasting them leave the blistered skins on and put in a paper bag for a 30 minutes or so. This loosens the skin, but for freezing... don't remove it. Freeze them with the skins on and when you thaw them later, the skins slip off easily, or you can help them a bit under running water. We'll play at the waterpark for awhile, then hubby and the kids will head for home. Monday morning I'll be heading north to surprise my sister for her 50th birthday. Friday I made an appetizer which was a corndog wrapped in burger seasoned with jalapenos and wrapped in bacon. Today I smoked a couple of corned beef briskets for pastrami. reinhard1 Posted April 25, 2011 Author Share Posted April 25, 2011 great idea with the corn dog wrap. wonderfull pastrami. and the ribs look awesome. i brought my 56 rouladen that i pre-made last night, along with the krout/bacon mix and 15 pounds of potatoes for german dumplings to my daughters for the easter meal. just one item i forgot at my house the RISER. could not believe it. my mind on food and not on the tools. well that ended all hope for dumplings so we had 15 pounds of mashed potatoes instead. the family and guests thought the meal was good anyway but i was looking forward for those dumplings big time. great gravey as usual from those roladen. glad you had a great easter meal. it was a great day to be with the family. good luck.
