NoWiser Posted March 30, 2010 Share Posted March 30, 2010 Boiled northern dipped in butter is EXCELLENT. At least with fresh pike it is, I'm not sure after its been frozen for awhile. Redlantern Posted March 30, 2010 Share Posted March 30, 2010 If they are big enough to fillet you might want to try cooking them in tinfoil. I use a bit of oil on the foil, then sliced carrots, butter buds and dill weed on top of the fillet and wrap it up. Can be cooked on a cookie sheet in the over or on a grill. hydro Posted April 2, 2010 Share Posted April 2, 2010 I've been doing the baked fish routine for a while and it's a big hit at my house. Here is my basic process:Use a glass casserole dish with a cover. Put a layer of fish on the bottom. one fillet deep, sprinkle with melted butter and some paprika. Bake at 350 degrees for about 30 minutes. Try it once then add whatever seasoning you like the next time to perfect your recipe. Works for northerns (I de-bone mine) and also for panfish. BobT Posted April 3, 2010 Share Posted April 3, 2010 Try a little lemon pepper and fry, microwave, or bake with a little butter. Coat with corn meal (with a little wheat flour is desired) or finely crushed saltines and fry with a light oil or butter. Season with your favorite spices, I like season salt and lemon pepper, and grill on a charcoal grill. Place them directly on the grill, no foil, until flaky. I usually stick it in the oven/grill for a few minutes, then rub a small piece of butter once the flesh is warm, sprinkle with spice of choice, then cook until finished. It's all pretty easy.If you didn't remove the y-bones and don't want to deal with them while eating, then pickling is your best choice. Feel free to modify/improve as needed.Place your fillets in a baking pan bake for a few minutes, remove and then brush them with butter or olive oil and sprinkle on some garlic salt, crushed black pepper, Italian seasoning and cayenne pepper and add some sliced jalapenos and red onions.
