Hot wings - favorite sauce, store-bought or homemade??

Looking for some opinions on your favorite brands/flavors of hot wing sauces.

Either store-bought or homemade recipes (to share of course wink.gif)are OK.

Buffalo-style, hot BBQ, etc. all fair game.

I live in a fairly small town so not too many choices. Looking for ideas that I can act on when I get to the "big city".

Hot, very hot, or mild, doesn't matter, but probably not thermonuclear meltdown - I like to be able to taste the flavor... wink.gif

Franks Redhot with a little butter and vineger just to give it a little kick or if you want HOT BBQ sauce that is awesome seach for Headcountry. I buy it by the gallon. Just as expensive to ship as the actual cost but worth it.The hot wings will be hotter then Franks redhot but not unbearable.

My favorite is Trappey's Mexi-Pep. Nice heat, great flavor.

I have been out of it now for awhile. Don't know where to find it. May have to have my local grocer try to order a case and buy the whole thing. Good thing it keeps virtually forever.

I did try the Franks "Hot Wing Sauce" (not jazzed up Red Hot Sauce). I thought the Franks Hot Wing Sauce was pretty good traditional buffalo-style sauce. Not blazing hot, but zippy enough to know you are eating hot wings. Might be a bit too snappy for some in the crowd.

Have any of you tried Nance's wing sauce? Some time ago I tried the hot version and thought it was pretty good. It was not really a Buffalo-style, but still somewhat along those lines with a bit more complex flavor as I recall. All I can find of it now is occasionally the mild variety.

Another combination that I like (but it's not really hot or very spicy) is to use Famous Daves Chicken Wing Seasoning on the wings, then grill them, then toss in a light coat of KC Masterpiece original that's been simmered a bit on the stove.

Sounds like I need to get over to St. Cloud and sample some of those BWW selections too.

Heres the wifes concoction. I love it!!!! Of course the wifes is always the best laugh.gif

12 oz franks hot sauce

quarter cup open pit bbq sauce

few dashes worcestershire sauce

couple dashes soy sauce

tablespoon garlic powder

tablespoon butter more or less for hotness

if you want it smokin hot just add more franks

Here is what I always use and I love it..

Deep fry the wings until desired crispness in a separate pan melt a stick of butter with a full bottle Louisiana style hot sauce(I think they are about 20oz). When done pour over wings in a bowl and mix... Real easy and real good.

Oh yeah don’t forget the Budweiser they taste so much better when washed down correctly.

perchking, you nailed it right there. That's the way original buffalo wings were made. I’ve always used Crystal for the sauce. Everything else is just different interpretations for style or personal taste. To this day I still prefer the original. Deitz, if you can handle the heat cut down on the butter that should thicken it up a little (not sure about the vinegar). The amount of butter corresponds to your hotness level.

Cut back on the butter and no vinegar as those hot sauces are primarily vinegar to begin with. That should help some with the thickness. Also if you like bbq sauce take 3/4 cup of your favorite bbq and 1/4 cup of hot sauce. Gives it a nice flavor and zing.

Deitz you can cook it down to thicken or give the wings a coating of sauce and put the in the oven for 5 min. and then give another coating and serve.By putting in the oven you will lose some of the crispness of the skin but will have plenty of sauce.They will be alot hotter so might need more beer grin.gif

I used to co-own a bar/restaurant and do a large portion of the cooking. We made our own sauce that was melted butter, frank's redhot, black pepper, garlic salt, and salt. We never measured a darn thing but made a gallon at a time of mild then added more redhot and crushed red pepper for med or hot. We also added chopped garlic to our mild sauce and sold lots of "garlic wings". Not tooting my own horn but we got lots of raves on our wings and they were real simple. Hours of boredom and slow times had me trying everything, some of my favorite wing concoctions had a splash of OJ and some honey in the mild sauce, also a spoon of BBQ sauce in there was good. My favorite was to deep fry till just about done, then roll them in sauce then plop em on the char-grill to finish and crisp up...

Whoaru99 - Whish I had measurements to give you but I dont. Just did it by feel and color. The brighter the orange the hotter it was. You can always cut it with more butter or heat it up with more red hot/ crushed red pepper

Dark Cloud I am going to have to try some of the OJ & honey and maybe a little of my Hot BBQ sauce. It all sounds too good but that maybe because I am hungry. If you like a real hot BBQ search for Headcountry and try there hot because it is hotter then Franks and a very nice flavor. Soo many wings and so little time grin.gif
