I am always looking for new ways to cook it and have fun with it. I'll share what I made the other night. It turned out really good!!!!I took a package of Venison chops and cut it into small cubes and strips. I then put it in a hot frying pan or wok with some olive oil in the pan. I also put a few tbsp of butter in. I spiced to liking with some garlic and pepper. I also put some worchestire (sp) sauce in. I cooked this up and put it to the side. I then cleaned the pan and put in a bag of frozen stir fry vegtables. I seasoned the veggies with some more garlic and a little olive oil. I then put the meat back in when the veggies were almost done. I put in some soy sauce and some more pepper and finished it up. It was great!!!! P.DONA Posted November 23, 2004 Share Posted November 23, 2004 Venison Kielbasa 1.5 lbs (3 parts venison to 1 part pork) 2 teaspoons minced garlic 1 teaspoon freshly ground black pepper 3 tsp salt 4 tsp brown sugar 1/2 teaspoon ground allspice 1 teaspoon fresh marjoram 1/2 teaspoon liquid smoke flavoring (a tad less) In a large bowl Mix the meat and garlic together, then mix all the ingredients in. I use surgical gloves and really go at it! Make sure it is thoroughly mixed, I hate a mouthfull of all spice I made them into 3.5 oz patties and just grilled them, but you can stuff them, and then even smoke them for about an hour, too. P.DONA Posted December 3, 2004 Share Posted December 3, 2004 I just tried this keilbasa recipe with 100% pure venison this morning!!! Man o Man!!! My 2 daughter loved it, too!!!!! That liquid smoke is powerfull. also, mix this up really well so you don't get a mouthfull of spices in 1 bite. I'm wondering about putting apple pie spice in it?? hanson Posted December 8, 2004 Share Posted December 8, 2004 It may be a little late now that your venison is in the freezer but we canned up a bunch of venison in little bitty jars (I think they are half pints). I just opened one and ate is straight out of the jar. It might be the best meat I've ever eaten. It doesn't even taste like venison anymore, more like roast beef! Stratosman Posted December 9, 2004 Share Posted December 9, 2004 I made some venison quesadilla's tonight and mm, mm, good. Season and grill boneless v. chops, to rare, medium rare, cut into thin slices, add sauteed onion, queso, (a certian kind of cheese that melts very smoothly, place on side of tortilla, fold tortilla over and brush melted garlic butter on the outside, place that side on the grill, and then baste the other. Let cook until cheese melts. The previously rare meat will cook some more. About 2 minutes per side. Remove and add lettuce and salsa. Then chow down. These things are awesome, give 'em a try.
