I shy away from making "time sensitive" items when we have people over at our house. If we were making steaks and had 8 family members over I could set the machine at 130 degrees and throw the steaks in and they'd hold there and when we're ready to eat sear em quick and they are done perfectly. The one he got also looks convenient since you can use an existing pot you already have rather than having some big device. Also gives you flexibility if making one steak or ten in a different sized pot. Finally, it's a toy. We all need some thing to tinker with to give life some sparkle. Precision cooking with a circulator has several advantages. One is that it does a better job than conventional methods for some things. Take a steak or piece of chicken as an example. If you put it in a pan or in the oven, by the time the inside is cooked, the outer part is overcooked. With Sous Vide the whole piece is cooked to exactly the same degree. Works for fish also. The second thing is time. Like leechlake said, cooking steaks can be very tricky even without company. A minute or two, or a little difference in thickness, or grill temp. can make a big difference in whether it is cooked how you wanted to cook it or not. With sous vide you bag it, throw it in the waterbath and an hour or so later it is done exactly how you wanted it. I bet it would even work for pastry cream or custard that gets cooked to a temperature high enough to thicken, but if too high it scrambles the eggs. It can even be used to pasteurize eggs if you are concerned about using them "raw", in something like eggnog. And it's a toy that will be fun to experiment with. Mid-Lake Rock Posted December 29, 2015 Share Posted December 29, 2015 I've been looking at buying into Sous Vide cooking. I have a co-worker that swears by it. He said his steaks and lamb chops are the best he's ever had. According to others, another benefit is that letting a tougher cut of meat (sirloin, top round, etc.) sit in the Sous Vide bath will break down the connective tissue and make a cheap cut much more tender. In the Winter when we have these Gigantic snow storms sometimes I use a method for steaks in the oven at 270 degrees. Works slick!! In 10 minutes i can whip up a lot of kindling for my wood stove. I like it!!! Kind of fun to use and produces a useful product. You have to pick the right piece of wood to split, straight grained with no knots but thats easy to find in my wood pile. Free shipping right now...
