thunder nailed it...yeast is the only one that matters.  I don't make bread a lot but old yeast makes matza.  

I buy yeast in bulk on Amazon for the price of a small jar in the store and keep in the freezer.  I have stuff that is going on 2 years old and is still good.  Just made pizza dough the other day with it.

I just threw out some that finally died after about 6 or 7 years.  Bought new.
