Cut fries and soak in cold water, change water until "starchy" color is gone. Heat oil to 350 or so and cook fries until tannish color and remove. Do the other batches and keep in bowl with paper towels between batches. You then put them back in at 375 or so for a few minutes to get to the color you prefer. You can do the first batch ten minutes or two hours before the final frying, it doesn't matter. EZPZ. first photo is after they have been fried once. There is not a better reason to grow tatters then for making French fries and mashed potatoes to die for, won't even mention baked ones..
