Soaked some ultra-thick pig chops overnite in some concentrated apple juice, sprinkled with seasoning, and onto the baby broiler...

Last 15 mns topped with some cinnamon apple sauce, then pulled when just a bit browned....

In the meantime, mashed some sweet taters with butter, brown sugar, and sprinkled with nutmeg, mixed a bag of fresh peas and giant pearl onions together in butter....dinner is served!

Food prep sometimes is just as important as cooking,  not only marinating but you might want to get a good injector, for say chicken, Turkey,  Pork butts, brisket etc etc.

Ya know smurf,  if you play your cards right, you could end up getting that smoker for Xmas. .

Well, it's Team Frick & Frack!  I marinate the chop because I WANT TO! It gives the chop a sweetish apple taste, and IMO, makes it more tender and juicy, especially when charcoal grilling. You ought to try marinating your meat more! But, do NOT take or reply to that sentence literally; this is a family page.   I know Boar is marinated a good part of the time, but I don't know if it's made him any sweeter. :P

Here, read and remember....

Hmmm...that's an oxymoron!  OK, I'll be a smart-elbow and ask,  why do you smoke meat then? Marinating , like seasoning or rub, is an INTERNAL seasoning, if you will. Why, I expect reinhard to chime in here any minute! ;)

I'm kind of old school and don't marinade many things  either.  Ironically I do use mint jelly on lamb chops so I get it.  Break out the A1 sauce (I can't believe that stuff even exists anymore).

Also, I don't marinade things for another reason.  I'm a clown and don't plan ahead enough to make it effective.

I havent smoked any meat yet. only thing I smoke so far is pike. got that down pat. not really having enough time is the main reason as well as not pulling the trigger on a smoker yet. I hope to have more time, weekends, now since we  quit doing the seasonal camper thing!

You marinate even when cooking.  All the seasonings you use in soups or stews or even roasting affect the outside and the inside of the meat.  Of course there is the standard marinade so spices and more can reach the outside and inside and for the main reason, to tenderize the cut of meat.  Brinning is also a marinade to bring moisture, flavor, to the meat over time.  I marinate at times for lean meats that I want to make more tender that would otherwise be dry due to lack of marbling.  Beer, wine, and brandy are used often in cooking [and to marinate yourself at times while cooking], for alcohol helps in tenderizing meats.   Chicken and pork products come "enhanced" with a sodium/water solution for extra moistness [and profit] as well.   So at times even when your not marinating you may buy a product that already is.  Even the turkeys you buy [unless organic], are enhanced.  Remember way back when Butterball used to actually put butter under the skin of their turkeys?, Then they changed that to margarine, and now are no different that any other brand.  They "enhance" them like the other products making them no different, but still charge more for them.  good luck

Thanks, reinhard! I shall now refer to my marinated meat as "Reb's enhanced chops".

In fact, I'm marinat...   er, "enhancing" a beef chuck right now with my SES (secret enhancer sauce) in preparation for the crock pot tomorrow. :P

    • Truly sorry to hear that duffman! I know that feeling.  Keep the good memories
    • Chamois passed away this weekend a couple days short of her 13th bday. What a great dog to hang out with here at home and on distant adventures. Gonna miss ya big time my little big girl.
    • Sounds pretty sweet, alright. I will check them out, thanks.
    • If you really want to treat your wife (and yourself) with a remote operated trolling motor, the Minn Kota Ulterra is about easy as it gets.  Auto stow and deploy is pretty awesome.  You just have to turn the motor on when you go out and that the last time you have to touch it.   24V 80lb.  60 inch shaft is probably the right length for your boat.  They ain’t cheap - about $3k - but neither one of you would have to leave your seat to use it all day.
    • Wanderer, thanks for your reply. I do intend for it to be 24 volt, with a thrust of 70-80. Spot lock is a must (my wife is looking forward to not being the anchor person any more).  With my old boat we did quite a lot of pulling shad raps and hot n tots, using the trolling motor. Unlikely that we will fish in whitecaps, did plenty of that when I was younger. I also need a wireless remote, not going back to a foot pedal. We do a fair amount of bobber fishing. I don't think I will bother with a depth finder on the trolling motor. I am leaning toward moving my Garmin depth finder from my old boat to the new one, just because I am so used to it and it works well for me. I am 70 years old and kinda set in my ways...
    • Dang, new content and now answers.   First, congrats on the new boat!   My recommendation is to get the most thrust you can in 24V, assuming a boat that size isn’t running 36V.  80 might be tops?  I’m partial to MinnKota.     How do you plan to use the trolling motor is an important question too.     All weather or just nice weather?   Casting a lot or bait dragging?   Bobber or panfish fishing?   Spot lock?  Networked with depth finders?  What brand of depth finders?
    • We have bought a new boat, which we will be picking up this spring. It is an Alumacraft Competitor 165 sport with a 90 horse Yamaha motor. I will be buying and installing a trolling motor,  wondering if I can get some recommendations on what pound thrust I will want for this boat?  Also, I will be selling my old boat, is there a good way to determine the value on an older boat ( mid-80's with a 75 horse 2-stroke  Mariner motor)  I will appreciate any help with these questions.
