pushbutton Posted March 3, 2014 Share Posted March 3, 2014 Tried pickling for the first time, put some jalapeños in this one, but the jar lost its seal and did not get it to the fridge for about 12 hours after....is it shot? Used about 2 cups vinegar, 1/2 cup water, 1/4 cup sugar, and not a lot of salt. In the past would not have given it a second thought, but since Jr. came along, sadly, kind of turned into that helicopter parent....seriously could care less for my gut, but worry about his. Love this egg boiling tip, and like mentioned by Huntnfish, a really fun thing to do with the kids since they even have a hard time messing it up. LMITOUT Posted March 7, 2014 Share Posted March 7, 2014 I can't say that I've boiled a lot of eggs in my life but I don't recall ever having an issue peeling them when I did. I was curious about this idea of poking a hole in the egg to make it easier to peel and was kinda hungry for some deviled eggs so I figured I'd do a test to see how it worked. The carton of eggs is dated: March 22. Poked three eggs with a pin on the wide end of the egg. Hole was easily visible. Placed the three test eggs and five unmolested eggs into a pot of boiling water. Reduced heat to a soft boil/simmer and covered with a loose lid (not a tight seal on the pot). Set timer for 15 minutes. When the 15 minutes had expired the water was drained from the pot and all eight eggs were placed in a bowl of cold tap water where they sat for approximately 2-3 minutes. Water was exchanged for fresh, cold water mid-way through the settling time. I examined the eggs and found the three that had the hole. Two had already cracked substantially around the surface of the entire egg. One had not. The shells of the other five did not have a crack. The eggs were randomly picked from the cold water and I peeled each one, first looking to see if it was one of the test eggs. I did not experience any difficulty peeling any of the eight eggs and I'm certain that if I gave them to a person who was not aware there were holes poked in three of them they wouldn't know any different. Just did another dozen that were just bought at the store. She makes deviled eggs pretty often in the summer. She'll be poking them from now on. Heat water to boiling remover from heat SLOWLY and eggs simmer for 15 min. drain, add cold water (once twice) let cool slightly in water drain and peel. 92GSteve Posted March 14, 2014 Share Posted March 14, 2014 Who woulda thunk poking a hole in an egg would lead to this kind of controversy? I will side with eyeguy on this one. Poked 17 eggs total, 12 of them were less than 2 days removed from the hen house. Some were green, some were brown, and even a couple speckled. The other 5 eggs were a couple weeks old from the grocery store. The 5 "aged" eggs peeled like butter. What really surprised me is that all 12 of the fresh eggs peeled clean. Usually about 1/3 of those fresh eggs get tossed into the egg salad pile and 2/3 are good enough for the pickled jar. The tack trick works. After smoking eggs for 25 years I am glad I ran across this method so that 100% of the eggs I boil and want to smoke get smoked and look marvelous. I have never been able to peel eggs like this so it works for me. I will take the extra 45 seconds to poke the holes from now on every time I want hard boiled eggs. We are not all great at perfect egg boiling techniques like those who have been trained in this art form. I have always slow boiled 8 minutes or so, then let sit close to the same. Rinse a couple times with cold water and peel. I will not change. I am toooo old to learn a new way to boil eggs. So therefore a poked egg will continue to be the perfect way for me. HA ! mmmmmmmm !
