walleye 4 me
My 5 year old boy has always had digestive issues and our specialist has suggested that he may have a gluten intolerance. We are trying a gluten free diet for 2 weeks to see if it makes a difference. We are having a hard time coming up with meals and one of his favorites is fried walleye, which we have plenty on hand. Our favorite is using crushed saltines as the breading but will have to find something different. Anybody have any ideas???

Let him try some baked Walleye in lemon pepper with some fine crushed crackers up top or just the lemon pepper if the crackers have gluten in them! Yuum! My new fav since I have to cut down on Deep frying!
updecreek
Corn flour, potato flakes, blue diamond crackers some are gluten free. My 12 year old has celiac disease = gluten free. He has his own fryer so anything deepfried with gluten go in our fryer. So no risk of Cross Contamination. Then he can have homemade french fries too. OnAFly
Sear it in a pan with salt and fresh ground pepper. Trust me, it's awesome and way more healthy than deep frying, especially when done in a little olive oil.
walleye 4 me
we do alot of fresh fish on the grill with olive oil and different seasonings. When taking out frozen fish we usually like to fry them and that is his favorite. I may have to try the suggestions above. Thanks!
OnAFly
I've never done it with frozen then thawed fillets, only fresh within a few days of cleaning.

lovetoicefish
My wife bought gluten free bread crumbs(ENER-G). Not bad but you have to spice-up the fillets a bit.
delcecchi
Rice chex and corn chex are gluten free, if I remember the box. I bet they would work great as a cracker crumb substitute.
Cicada
Lately, I've been using potato flakes or crushed sour cream -onion potato chips. Nice change of pace and tastes pretty good.
