Breakfast in a bag! Nothing simpler. Make them up in advance; Crack eggs, add precooked meat (bacon, ham, etc) into a small freezer bag, keep cold. Boil the for a few minutes till the eggs look done. We do it all the time for deer camp. Don't try to do more than one 3 egg "omelette" per bag, so 1 bag pp per day.

Only thing you have to watch is not to let the bags touch the side of the pan during boiling, which can be a little tricky.

If you use paper plates, cleanup is one fork pp! And of course everyone should have thier own fork anyway and be responsible for it's cleanlieness! (or lack thereof:)

Skillet Scramble. Brown sausage and hashbrowns in cast iron skillet. Move that to sides of pan and scramble eggs in middle. Can spice up with peppers, onions etc. Paper plates and all you have to clean is a pan and spatula.

The bag idea is great for convenience and I have done it a number of times - but I never got much flavor with the boiling deal and not sure how healthy boiling plastic is sick

This sounded good to me on the cooking/recipe forum added by Bluewater:

This is a breakfast one thats been a big hit in our family,

1 bag of frozen hash browns

lb ham (cooked)

1 Medium onion

1 medium red pepper

1 1/2 to 2 cups of coly-jack

12 eggs

1/2 to 1 cup of milk

salt and pepper

1. spray a little pam in crock pot

2. Put a layer of hashbrowns on bottom

3. Add a layer of ham, onion, pepper cheese in order

4. Repeat layers, ending with a layer of cheese.

5. Beat eggs, milk, salt and pepper together

6. Pour over the layers, cover and turn on low

8. Cook for 8-10 hours(over night and you wake up its ready)

On opening weakend at my cabin, I like to bring a bag of fresh morels. I catch a few perch and then I dice up an onion, my morels, perch and saute in butter. AS that sautes, I whip a few eggs and a little milk and add it to the mix. I scramble this mixture and when its done I add a little shredded cheese over the top. I serve this with wheat toast. I'm almost in tears of joy just thinking about it. Try it, you'll like it. WFT

Instead of spraying Pam in the crockpot as in Ducker's recipe, put a "oven bag" in the crock pot and just lift it out when you're done and throw it away. Clean up, done! I think they now make crock pot bags for this purpose too.

I've had boil-in-bag omelettes before ... they're okay ... kind of lacking in flavor imo, kind of got a plastic taste to them imo.

I prefer a skillet breakfast --- having to wash 1 or 2 skillets is not a time-consuming process. Use one skillet for hashbrowns, use the other one for the meat then the eggs - it's quick, it's easy, and it tastes better.

Breakfast burritos are super easy and don't require dishes. Just scramble up some eggs with some browned spicy pork sausage, add some diced jalapenos. Stuff it in a tortilla with some cheese, salsa and sour cream.

I know it's not home made, but Jimmy Dean makes skillets in a bag, frozen, hashbrowns, peppers, onions, and sausage, all ready to go, you just fry it up for a while add eggs and your done. I bring them into the boundry waters every time I go. You could always make your own as stated earlier. The skillet thing is just super easy. I don't remember but if you have an oven an egg bake is super easy as well.

I prepare, freeze, and vacu-seal most of my meal items when I am planning sleeper trips. Mashed potatoes, calico beans, sausage gravy, etc. Just heat the bag in hot water, clip the corner and squeeze onto plates. Toss the bag in the garbage and dishes are done! grin

That said, bisquits and gravy are an easy favorite. If you want to dirty a skillet, our annual camping breakfast is "sliders." Brown a pound of Jimmy Dean sausage in the pan, the throw in a dozen eggs and stir until cooked. Scoop it out onto warm tortillas, add salsa or hot sauce, and let 'em slide right down!

+1 it's the easiest way to go and not a mess.

    • we had some nice weather yesterday and this conundrum was driving me crazy  so I drove up to the house to take another look. I got a bunch of goodies via ups yesterday (cables,  winch ratchet parts, handles, leaf springs etc).   I wanted to make sure the new leaf springs I got fit. I got everything laid out and ready to go. Will be busy this weekend with kids stuff and too cold to fish anyway, but I will try to get back up there again next weekend and get it done. I don't think it will be bad once I get it lifted up.    For anyone in the google verse, the leaf springs are 4 leafs and measure 25 1/4" eye  to eye per Yetti. I didnt want to pay their markup so just got something else comparable rated for the same weight.   I am a first time wheel house owner, this is all new to me. My house didn't come with any handles for the rear cables? I was told this week by someone in the industry that cordless drills do not have enough brake to lower it slow enough and it can damage the cables and the ratchets in the winches.  I put on a handle last night and it is 100% better than using a drill, unfortatenly I found out the hard way lol and will only use the ICNutz to raise the house now.
    • I haven’t done any leaf springs for a long time and I can’t completely see the connections in your pics BUT I I’d be rounding up: PB Blaster, torch, 3 lb hammer, chisel, cut off tool, breaker bar, Jack stands or blocks.   This kind of stuff usually isn’t the easiest.   I would think you would be able to get at what you need by keeping the house up with Jack stands and getting the pressure off that suspension, then attack the hardware.  But again, I don’t feel like I can see everything going on there.
    • reviving an old thread due to running into the same issue with the same year of house. not expecting anything from yetti and I already have replacement parts ordered and on the way.   I am looking for some input or feedback on how to replace the leaf springs themselves.    If I jack the house up and remove the tire, is it possible to pivot the axel assembly low enough to get to the other end of the leaf spring and remove that one bolt?   Or do I have to remove the entire pivot arm to get to it? Then I also have to factor in brake wire as well then. What a mess   My house is currently an hour away from my home at a relatives, going to go back up and look it over again and try to figure out a game plan.           Above pic is with house lowered on ice, the other end of that leaf is what I need to get to.   above pic is side that middle bolt broke and bottom 2 leafs fell out here is other side that didnt break but you can see bottom half of leaf already did but atleast bolt is still in there here is hub assembly in my garage with house lowered and tires off when I put new tires on it a couple months ago. hopefully I can raise house high enough that it can drop down far enough and not snap brake cable there so I can get to that other end of the leaf spring.
